This week we have stuck to the meals, but not the right order! [strike]Next week we are going to try and live completely out of the store cupboard/freezer.[/strike] Decided against this. We went to Lidls and spent about £20 on fresh produce and a few luxuries which is still well under budget but means I'm not racked with guilt for not serving up fresh fruit/veggies.

Monday - 5 bean chilli in over tortilla chips with steamed green beans and guacamole
Tuesday - Only OH home - Bean burger and fries and salad
Wednesday - Vegan moussaka and sweetcorn with salad
Thursday - Lentil spaghetti with wilted spinach
Friday - Aubergine curry with chappattis
Saturday - Rosecoco beans, roasted carrots, salad and HM bread
Sunday - Vegan sausages, chips and [strike]beans[/strike] brocolli

Also this week someone has given us 2kg of strawberries and lots of dates...yum :)

Lunches/snacks: HM hummous and pitta bread, pittas/wraps with peanut butter and/or jam, might make a soup out of freezer veg if we get bored of veg.

Not the healthiest week but needs must if we are going to go totally from the storecupboard, and will be fun if we can do it! DD gets a snack and a hot lunch with two vegetables, a side and a pudding - so I don't feel too guilty ;)

Unfortunately we've run out of squash so will have to ration out the juice we have - we tend to drink water with dinner anyway.

I'm really struggling for inspiration this week - I've got freezers and cupboards full of food but just can't think of anything to make with it all. :( So far I've got:

Friday - smoked sausage, scrambled egg and baked beans (quick meal before going out for the evening)
Saturday - green chicken and veg curry with rice
Sunday - meatballs with garlic bread
    Monday - gardener's pie
Tuesday - Thai veg curry / stew with coconut rice
Wednesday - bacon-wrapped fish with braised green veg
Thursday - pasta al lago (with bacon, egg and cheese - a very adapted take on carbonara!)

Hopefully I'll think of something for the other days in a bit.
Back after a very long break!

MandM90 and Kittikins, it's this one here, only without the rosemary scones :) You could probably make it without a slow cooker and just cook in a low oven for a good few hours instead.
