Thanks for sharing meals everyone
Hope everyone has a good week x
M+M90: I love moussaka! How do you make the topping (or do you just use the tomato sauce, like I do with my lasagne?) For cheesey sauces I usually blitz some Sheese with soya or oat milk which sets nicely enogh for moussaka but would be interested to see how you do yours, if that's ok?
Breakfasts
Fruit n fibre with soya or oat milk and juice, or peanut butter on toast with the milk to drink.
Lunches
Sat: Smoked Cheddar-style Sheese Savoury Stotties
Sun: Stuffed Flat Mushrooms with veg, roasted pots and gravy. Possibly Rhubarb Crumble for afters with some aerosol rice cream donated by MIL
Midweek: pease pudding salad wraps/sarnies for the others with apple/kiwi + soya yoghurt or dessert. Mine will be salads with avocado, olives and dark rye crispbread - yum!
Teas/Snacks
For the girls after school, this is usually a couple of crackers+ crudites with peanut butter to dunk, or a homemade cake if I do any (plan on some rhubarb oat buns) with raisins, or banana and slice of bread + cup of soya or oat milk.
Dinners
Sat: Fishless Fingers with mash and baked beans or veggies
Sun: (Tea) Toast with pate, carrot sticks, raisins and probably rhubarb oat buns
Mon: Cauli Pasta Sheese Bake with spring greens
Tue: Bean Couscous Salad
Wed: Apple Fritters, Pease Pudding and Steamed Taties
Thu: Dahl and Rice
Fri: Marguerite Patties with spring greens (a bit like Marguerite Patten's mock fishcakes in that there is no fishbut seasoned with smoked sea salt and nori flakes instead )
Suppers: The girls have a cup of milk before bed, there is popcorn and carrots for us if we get nibbly.Love and compassion to all x0 -
I'm a bit late with mine this week as I was away on business at the end of last week. I'm still trying to run down the contents of my freezer so I can defrost it - I WILL get there one these days!
(Stuff with an F is from the freezer):
Friday - chilli con carne (F) with RTC smoked cheese on toast (quick meal when I got home from my business trip*)
Saturday - pesto, smoked ham and cherry tomato pizza
Sunday - sausage (F) and tomato (F) lasagne
Monday - meatballs (F) with tomato and olive bulgar wheat (from AF)
Tuesday - Mexican pork and bean stew (F)
Wednesday - prawn (F) jambalaya
Thursday - falafel (F) and humous wraps (F)
* Sorry, I'll stop mentioning it now - it's just so long since I've been away on business that it feels like a serious novelty!Back after a very long break!0 -

We use Free and Easy "Cheese" sauce from Sainsbobs...not very OS, I know
Have also made this: http://epicureanvegan.com/2010/05/23/creamy-macaroni-and-cashew-cheese/ and used it for moussaka and it was delish but a bit faffy.0
