I'm going to be seriously OS starting this week as I'm going to be working on paying off a massive debt that's been hanging over my head. It's going to take me over a year to pay the debt but I'm going to do it. So:
Breakfasts: I made a massive amount of American pancakes and froze them in portions of two. We'll eat them with lemon curd from Tesco's (Value is only 22p and delicious!). Some mornings we'll have omelets instead as we're lucky enough to have our own chickens.
Lunches: HM couscous and bean salads mixed with chopped tomatoes, grated carrots, herbs and oil and balsamic vinegar or baked beans (got them the other week from Lidl 4 tins for a pound) mixed with chopped quorn sausages kept warm in a food thermos or egg mayonnaise sandwiches.
Dinners: Made a big pot of tomato sauce, so we'll have HM lasagna two nights and spag bol another night, both made with the sauce mixed with quorn mince. I'll make my own cheese sauce for the lasagna. Other nights will be mac and cheese and chips, egg and chips and peas, quorn bacon hotpot, and aubergine and potato bake.
For dessert, value yogurt (55p for a big carton) with lemon curd. I may make a crumble with tinned value fruit and I've also got a bunch of bananas for snacks.

Did you cook them, then freeze them? DW loves pancakes but I'd never thought to make a big batch then freeze! How do you store them?
We've already had Weds on Monday, and Fridays meal on Tuesday, and made two vegan moussakas and frozen them but not touched either yet :rotfl:Getting a bit muddled here! I should really start writing the plan down somewhere visible. The aubergine curry was the best I've ever tasted though...yum!0 -
How have I never seen these threads before?! I'm a rubbish cook and tend to eat the same things over and over.
This has given me food for thought - boom tish!DEBT FREE SINCE 25.07.14!
