Where is this year going:eek::eek::eek:

Here is our meal plan:

Mon-Meatballs in sauce, spagetti and salad
Tues-Chicken, spuds and veggies
Wed-Egg & Chips
Thur-Chilli Con Carne
Fri-Toad In Hole, spuds and veggies
Sat-At Friends
Sun-Beef, yorkshires, roasts and veggies

They are our meals but may get mixed round a little, but will try and stick to it.

    Most of this week will be leftovers from the last week, so we're going to have another cookathon at the end of this week :)

    Monday: Veggie Korma, probably with some kind of bean/chickpea
    Tuesday: Date night :) - probably Wagamamas, the local curry house or Yo! Sushi as they are the most vegan friendly
    Wednesday: Cous cous with chickpea, carrot and courguette Algerian stew
    Thursday: Lentil wholewheat pasta with veg (sauce left over from last week(!))
    Friday: 4 bean chilli wraps with salsa and guac (chilli from last week)
    Saturday: Sweet potato fries, garlic roasted brocolli and bean burger/veggie sausages/something junky from the freezer
    Sunday: Lentil roast (leftover from last week in freezer) with roast pots and steamed veggies

    Snacks: LIDL ginger nuts (cheap, vegan and yummy)
    pitta HM hummous - I forgot to soak chickpeas so made a dip with lentils, peanut butter, coriander, chilli, olive oil and a splash of white wine vinegar...absolutely FANTASTIC despite the strange substitutions! and olives (75% off olives at Sainsbobs so we ordered a enough jars to last a while with our shop, using a code for £15 off £75 - wayyyy more than we usually spend so we stocked up on things that were on offer or are good value/yummy from there)
    fruit, fruit and more fruit

    Edit: Swapping Monday for Thursday as last night I took the pasta sauce out to defrost; got my days mixed up.

    here we go again :) I have been pretty good this week, we didnt have the planned sunday dinner as we were VERY hungover due to a wedding saturday, so we had takeaway. twice :D

    We 9th lemon sole, jersey royals, asparagus
    Th 10th pasta puttanesca
    Fr 11th wasabi tuna, sesame noodles

    hotcookie that is my kind of food (or would have been when I was an omnivore!)

    I just googled nasi goreng and it looks gorgeous, I love love love tamarind. Could you tell us how you make it so I could make a veggie version? Looks like the perfect dish for snuggling in front of a movie!

    I loved puttanesca, you've reminded me; I'm going to try and figure out a way of rounding off the flavour of the sauce without the anchovies. It's what I always used to throw together when I came home, intoxicated. There's something satisfying about sizzling anchovies, chucking in such robust flavours and then slathering the sauce over hot pasta. Yum.

    Gosh thinking on my feet now as i have just seen the thread pop up, we have pretty much stuck to this weeks meal plan apart from tomorrow night as we are out for tea, so here goes
    Monday - Chicken kebabs with savoury rice
    Tuesday - Spicy Duck Noodles
    Wednesday - Jambalaya or gumbo type thing
    Thursday - Sausage casserole
    Friday - Talapia fillets, with rice & salad
    Saturday - Fajitas
    Sunday - Roast Beef, roasties, yorkie puddings & veg.

    I've got very few meals to plan this week:

    Friday - out with friends
    Saturday - chilli con carne, with cornbread if I get round to making it or garlic bread from the freezer if I don't
    Sunday - toad in the hole with braised green veg
    Monday - out with family
    Tuesday - fishcakes with veg of some sort
    Wednesday - away on business
    Thursday - away on business

    The business trip makes for a cheaper week as my employer will pay for my food while I'm away. :money:
    Back after a very long break!

    Are you vegan MandM90? Or just veggie? I use a Diana Henry recipe from food from plenty-its great for leftovers, but doesn't have lots of ingredients (I don't use prawns, and have made with pork, but planning on guinea fowl for this one) The eggy/omelette bit makes the dish perfect, but I reckon you could do without if vegan, and maybe use some mushrooms, peas or broccoli instead of the pork to make it veggie
    I like spicy food (as you can tell from my menu :) ) so I keep the seeds in the chillies :D

    Hmm puttanesca without the anchovies... Maybe just double up on the capers? A bit of veggie worcestershire sauce? LOTS of chillies tho, and I find a wee squeeze of lemon juice sometimes finishes it off well.

    Let me know if you want the nasi goreng recipe, there is one on google, but it isn't the same as the book (lots more ingredients) although it looks really good :D

    This week we are doing the Living Below the Line Challenge, so will be posting my shopping list and costings on that thread in a bit. Because all of the meals will take a bit more effort than usual, I don't want to mark particular days. It usually is just a blueprint anyway, but I feel I need to actually give myself the feeling of leeway!

    Breakfasts: porridge with dried mixed fruit

    Lunches: pease pudding and onion salad sandwiches, or potato and onion soup, or peanut butter sandwiches. Kiwi or carrot sticks.

    Tea/Snacks: carrot, dried fruit, fruit buns, cereal bars

    Dinners:
    (Saturday) Mustard veg curry with flatbread and onion bhaji
    (Sunday) Peanut Loaf wth veg, potatoes and onion gravy
    Gnocchi with tomato sauce and greens
    Pasta with tomato sauce and greens
    Hotch Potch Pie and baked beans
    Cottage Pottage Pe with greens
    (Friday) Split Pea Fritters, chips, carrots and cabbage

    Suppers: Warm milk for the girls
