    We're vegan hotcookie. I'd love to know your recipe :D

    Boodle: Here is my Algerian stew recipe...
    1 onion
    2 cloves of garlic
    1 tsp turmeric
    1/2 tsp cinnamon
    1/2 tsp cayenne pepper (or to taste, for DD I leave it out then we put harissa on ours)
    5 cloves, crushed
    2 bay leaves
    1 tin chopped toms
    1 tin cooked chickpeas/dry equivalent
    veg (or chicken, if you like) stock cube
    2-3 carrots
    2 courgettes
    and parsnips/potatoes if you like...peppers work well too so anything goes

    Fry onion and garlic in olive oil with all of the spices

    Whilst they are frying, peel carrots and chop all veg into chunks.

    Then chuck in tomatoes, veg, drained tin of chickpeas and cover veg with water. Bring to boil then simmer for half an hourish/til the veg is cooked to your liking. Season and serve over cous cous.

    The sauce is quite thin, which is perfect for being soaked up by cous cous but you can add cornflour; when we ate meat I'd toss chicken in flour and fry it off then add all other ingredients and that made the sauce a thicker consistency.

    If you like your veg a little less soft, add them ten mins before end of cooking time. We like them soft and soaked in the broth though...yum.

    Here is our meal plan:

    Mon-At a friends babysitting so they are leaving us dinner
    Tues-HM chicken & veg soup
    Wed-HM leak & potato soup
    Thur-Roast chicken & veg
    Fri-HM donor kebab in wraps with salas
    Sat-Spag bol
    Sun-Beef, yorkshires, roasts and veggies

    Breakfast is cereal, lunches are either ham sandwiches or tuna salad.

    Tenth Anniversary Combo Breaker
    I havn't posted for a while, but have carried on meal planning, although I can feel myself slipping. I think 'publishing' my plan will keep me on the straight and narrow!

    SUN: Slow cooked leg of lamb, Roast pots, Brocolli and Green Beans. Ben & Jerry's (Half price) for pud.
    MON: Roast Veg with cous cous, grilled halloumi, pittas and houmous. Vienetta for pud.
    TUE: Breadcrumbed fish and Oven chips with salad.
    WED: Sausages, mash and peas.
    THUR: Steak, oven chips & mushrooms followed by birthday cake! (DH)
    FRI: Jacket potatoes with either beans, tuna, coleslaw or cheese.

    Lunches will be H/M soup & H/M rolls or leftovers. Breakfasts usually porridge and H/M raisin toast.

    i need to get back on track with meal planning, need to use what I have in the freezer so here goes

    Sunday - HM pizza
    Monday - ham for OH and DS salmon for me, salad, cheesey coleslaw and jersey royal new potatoes
    Tuesday - turkey casserole and quorn sausage for me with broccoli, carrots peas and rest of jersey royals
    Wednesday - thai prawn curry
    Thursday jacket potatoes with cheese and beans
    Friday - fajitas

    Ok, I will give the recipe as is in the book, but you will need to vegan it up :D Not sure what to do re the egg-I suppose just leave it out, or you could maybe use silken tofu?

    From "food from plenty" by Diana Henry

    heat 1.5tbsp groundnut oil in pan, fry 1 onion, sliced med-high heat, until soft and golden (with still some bite) Add 3 sliced garlic cloves, 2 red chillies sliced (she says to leave seeds out, but we like it spicy!) and 300g cooked pork (we used guinea fowl last night, but chunks of tofu would be nice I reckon) cook for another couple minutes (until pork gets a bit of colour)
    Then add 400g cold cooked rice, and 4 spring onions (scallions) sliced on diagonal. Don't press it down, lift it around with 2 spatulas (so you dont make the rice stodgy)

    In the meantime make an omelette with 3 eggs-dragging cooked egg into centre of nonstick pan and letting uncooked fill the space. Once cooked slice finely.

    Then add the egg to pan with 4 tbsp dark soy, 100g cooked shelled prawns (I don't use this) and salt and pepper, and mix through cooking for another couple of minutes until all mixed and heated through.

    Last night I used a lot more veg in it-adding sliced mushrooms and sugar snap peas when I added the garlic, chilli and pork, and beansprouts when I added the rice. It was YUMMY. I also served with a drizzle of kecap manis at the end (an indonesian sweet soy sauce)

    And I could have used an extra chilli (with the seeds:D)

    Thanks HC...we're definitely seeds in people too. I can fiddle with it, I'm sure. Whenever there is seafood in a recipe I add a smattering of chopped seaweed (the kind you get for sushi) and it really gives it that seafood taste.

    We'll definitely be trying this next week :)

    Samphire is a great vegan alternative to seafood. Gives a real taste of the sea.

    Well, I have decided it isn't going to be puttanesca tomorrow night, as I have a load of mushrooms that need using, so was going to a puttanesca inspired veggie alternative ,with chilli, onions, celery, mushrooms, capers and olives, which I can rustle up today to reheat tomorrow with some pasta. Hey could almost make it vegan if I didn't top with cheese :D

    I was thinking a little tamari or soy sauce might sub for the anchovies. Will try an olive, tamari, chilli and caper sauce for lunch at the weekend and see what happens :)
