I understand that Sky won't do non-Sky work but if I say that I wanna keep my current two cables for Freesat then surely they'll have no choice but to either run two new cables from my current dish for Sky, or install a second dish and run two new cables from that?
If I were you, I'd simply employ an independent installer to put new cable runs into the existing dish and also pay him to install Sky for you.
It will be a more expensive route, but you'll get a bespoke service.

I want to keep the old dish because it is larger than a normal Sky minidish

If it's not a Sky dish, a Sky LNB won't fit (and if it does fit it won't work efficiently because it's designed to "see" a wide oval dish).
