iPhone 4s and GiffGaff SIM how does it work?

Sorry if this is too specific but I'm new and a complete technophobe. I'm a bit frightened I've made a mistake so can someone please take pity and help me.

After reading Martins article on the best deal for iPhone I have done the following: Ordered an Iphone 4s from Apple directly (arriving tomorrow woo-hoo!) but thought I could just take the SIM out of my iPhone 3 and get going but apparently I need a microsim.....so...I have ordered a micro sim from GiffGaff and asked Tesco (my old provider) for a PAC code.

So, when the phone and microsim arrive what do I do?...
Register Sim with GiffGaff
Top up with Credit card
Put sim in new phone......

What else, how do I get the number transferred over, what about all my contacts etc? How do I 'clear' the old phone to sell it on ebay? Are there any settings in the phone I'll need to update?

Really confused. Or do I just stick with Tesco and ask them to send me a new microsim?

    it should set it all up via itunes when you sync the new phone first time.

    make sure to backup the old phone to the computer and restore the new one from backup.

    it should then put your contacts, apps, mail accounts and mail, music and texts on the new phone.

    in terms of selling it ebay isnt great as they charge fees you have to possibly deal with non paying bidders and can hold the money on iphone sales for 30 days or until the buyer has left positive feedback.

    its better to sell it via one of the recycle sites as they offer a price and pay it guaranteed.

    orange have their own site orange recycle you dont have to be an orange customer to use it.

    in terms of clearing it once you have backed it up when you connect it to itunes there is an option restore to factory settings which will wipe it.

    make sure you back it up first though
