Thanks everyone. Just about to make my attempt. Going to use lard as run out of oil. I note that the recipe don't add water. Something I have always done as told it was 'how you make them'. I will let you know later how they turn out.0

I made my usual Yorkshire mix on Xmas Day - shoved it in the oven, then 10 minutes later remarked "it looks almost done, and it's HUGE!!" - it was then pointed out to me that it was a fan oven and I should have turned the temperature down a bit.
I make mine with flour, 1/2 pint whole milk, 2 eggs. It then goes in the fridge for 1-2 hours (just because I've made it earlier when I fancied it, rather than the time being important). I then take it out and splash 1-2 tablespoons of cold tap water in it and give it another good beating.... then it's off into the hot pan with hot oil.0 -
I agree about the eggs, one is not enough.0

Fan, electric, gas, makes no difference to me, I still can't cook yorkies to save my life. You're alright if you don't mind a sort of flat scotch pancake type thing with cripsy edges with your roast, those I can do. every bloomin timeAccept your past without regret, handle your present with confidence and face your future without fear0

Well, thank you so much. I didn't use any water, two eggs and used trex as no lard and they rose brilliantly.0
