For our fruit salad I usually use a tin of pears in juice as a base. Add honeydew melon, kiwi, grapes, bananas, mango, berries in season.

We always used either orange juice or the juice out of tinned peaches or mandarins. OH's view is that fruit salad should be made with syrup - made from sugar and water. Might be because he'll have sugar on everything!

He's right though, kind of! If you have fruit salad in a restaurant it will always be made with stock syrup which is made by boiling sugar in water, usually with some citrus peel and maybe a cinnamon stick and a couple of star anise. Although obviously not good if you're trying to watch the calorie intake :rotfl:Stock syrup recipe HERE.

    Evening all.

Been to the supermarket this evening and started drooling over the fruit salads.

Now I've made one this evening and it's yummy.

Is there any way I can make a huge one up and leave it in the fridge, as I'm a chocolate monster I need something else to nibble on.

I have pineapple, blueberries, strawberries, apples, bananas, plums, peaches, grapes, kiwi, mango, papaya and melon.

Is it a case of just chop up, put into a bowl and leave or eat.
Do I need to put any kind of juice on it to keep it fresh?
And how long will it keep fresh for.

    Thank you

I think you need to put an acidic juice on it to stop the fruit browning. I used to use pineapple juice, but orange juice or a squirt of lemon would work.

I usually use some orange juice to soak the fruit in .Great way to get your five a day easily as instead of nibbling a biscuit or chocolate a couple of spoons of fresh fruit salad is great I also sometimes make a jelly up and pour it into individual clean yoghurt pots to set and add chopped up bits of fruit to that so it sets in jelly as you buy them in the SM.Blooming sight cheaper than the little pot you buy readymade

I put a little bit of blackcurrant squash (neat) on my fruit salad. Not sure how long it would keep though, wont it go soggy if left in the fridge?

You can either use orange juice or boil up a simple sugar syrup - I tend to use orange juice as it is quicker :)

I'd go for pineapple juice sprinkled over since you already have pineapple in the mixture. Keep in an airtight container and it should last a couple of days.
I'd be tempted to put it in the freezer and use to blitz into smoothies or icecream when it starts to "go"

It's not going to keep very long in the fridge - sorry. Once it's chopped up every surface of the fruit is open to the air and will oxidise - ie rot. Lemon juice or orange juice will slow this down. Simple syrup - equal quantities of sugar and water boiled to make a sugary liquid - will do the same. But you will need to eat it fairly quickly. It's no different to chopped veg - once cut up into small bits it won't keep long.

One good fruity thing is melon blended into a smoothy. Can be fresh or frozen melon. Just put the melon on its own into a blender - be prepared to stop the blender a few times to push down the chunks. It's worth the trouble - blended melon is amazing - fruity and yet creamy as well and it's just melon - I really recommend it :)

We find that it usually lasts at least 3 days in a well sealed tub in the fridge, as long as the fruit is fairly fresh to start with and you don't put soft berries in it. Some pieces will start going a bit squashy by day 3, but they are still edible. We put a squeeze of orange or lemon juice on it too.
