    The reason why I bought this is
    Hot water is less denser than cold water and the bigger the difference in temperature between the hot and the cold water - the slower the mixing. At least that's why thermodynamics says.

    In my tank, the immersion only heats the top part and the lower part is heated by the wet system - I have noted the marked temperature difference when I touch the hot water cylinder ie, the top being hot and the lower half being cold! If only the immersion was in the lower part along with the coils.

    4.4 O's today made up for less than 2 yesterday. which means after 2days already short by 2 O's

    Long thermocouples are indeed hard to source. But you still have two options :-
    A. Use one like that I posted last week (only 11" long) or a slightly longer one in same range (they go up to 18"). It really doesn't matter that the thermocouple tip won't be at the extreme end of the element.
    B. Use a surface mounted thermostat instead

    You'd just short out the 'normal' thermocouple altogether and make sure that the supply is fed via the new thermostat.

    I allready have a surface mounted thermostat for the feed from my gas boiler. Are you saying i could use that?. It goes up to 90.

    I wouldn't recommend it - at least not without a lot of additional wiring that would make sure the two circuits weren't likely to interfere with each other. But you could mount a similar one alongside it (or higher or lower if the fancy takes you) and just rewire the immersion feed to go via that.

    Considering that you're looking at pushing the DHW water temperature so high, there's a number of points to consider ... what class is the cylinder, how old is the cylinder, if/when it fails, where does all of the scalding water go, what is the stated operating range & reliability of any existing/new TMVs (and you really do need TMVs) ? ... Above 70C you're in really serious harm territory, so consider the potential consequences and take extra care.
