  • Sorry it took so long for me to post these but here we are - my sister & family report that these are quite tasty!



    Egg Free Cake Recipes



    Vegan chocolate sponge cake.

    300g/10oz self-raising 85% wholewheat flour

    50grms/2oz cocoa powder

    3 teaspoons baking powder

    250 grm/9oz vanilla sugar or caster sugar with 1 and half tsp vanilla extract

    9 tablespoons sunfloweroil

    350 ml/12fluid oz water

    vegan margarine for greasing.

    1) preheat oven to 170c/350f/gas mark 3.

    2) grease to 20-22cm /8-8and half inch sandwich tins and line the base of each with a circle of greased grease proof paper

    3)sift flour, cocoa & baking powder into bowl, add the sugar, vanilla if used, oil and water. Mix well to a batter-like consistency.

    4) pour mixture into tins and bake for about 40 minute, until the cakes spring back to a light touch in the centre.

    5) turn the cakes out onto a wire rack and strip off the lining paper. leave to cool.

    6) sandwich the cakes together with buttercream or fudge icing. decorate with grated chocolate or icing sugar.

    Variation-
    use 350grm/12oz flour and omit the cocoa. replace 2 tablespoons of water with 2 tablespoons of lemon juice, and add grated rind of one lemon. sandwich and top with buttercream or fudge icing and decorate with mimosa balls and leaves cut from angelica.





    Eggless Fruit Cake
    Makes one 18cm(7 in) cake

    225g(8oz) plain 85% or 100% wholemeal flour
    2 tsp baking powder
    1 tsp mixed spice
    175g(6oz) Barbados molasses sugar
    6 tbs melted butter
    450g(1lb) mixed dried fruit
    50g(2oz) glace cherries, washed and quartered - optional
    25g(1oz) soya flour
    25g(1oz) ground almonds
    225ml(8 fl oz) water
    25g(1oz) flaked almonds

    Set oven to 160C(325F), gas mark 3. Grease an 18cm(7in) round cake tin and line with greaseproof paper. Sift the flour, baking powder and spice into a large bowl, tipping in the bran from the sieve too. Then put in all the remaining ingredients except for the flaked almonds. Beat together with a wooden spoon, or in a mixer, for 2 minutes, then spoon mixture into tin and sprinkle with flaked almonds. Bake for about 2 and ¼ hours, until a skewer inserted in the centre comes out clean. Let cake cool for 15 minutes in the tin, then turn out on a wire rack, strip off paper and leave until completely cold. Store in an airtight tin. Will keep for 3 months in the freezer.

    Wholewheat Banana Tea Bread

    50g(2oz) butter
    50g(2oz) real Barbados sugar
    75g(3oz) golden syrup or clear honey
    225g(8oz) self-raising 100% wholewheat flour
    50g(2oz) walnuts, chopped
    2 ripe bananas, peeled and mashed
    1 tsp baking powder
    2 tbs soya milk
    (Note: I often use half white and half wholewheat flour instead, also dark brown soft sugar if I have no Barbados sugar. I also leave the walnuts out if children don’t like them!)

    Preheat the oven to 180C/350F/Gas mark 4. Grease a 450g/1lb loaf tin and line with a strip of greased greaseproof paper to cover the base of the tin and extend up the narrow sides.Heat the butter, sugar and golden syrup or honey gently in a small saucepan until melted. Set aside to cool until you can comfortably put your hand against the side of the pan (put pan in a bowl of cold water if in a hurry). Put flour, baking power in a mixing bowl with the walnuts and mashed bananas. Add cooled melted mixture and soya milk, mix well. Spoon mixture into tin.Bake for 40 mins, or until a warmed skewer inserted into centre of loaf comes out clean. Turn onto wire rack to cool. Strip off lining paper.

    there are more egg free recipies in womans weekly this week (is the second part) they are also gluten free, dairy free and something else free.
  • Hi.

    My son has an egg allergy. At first we could have nothing with egg in it but now can have food that has egg in them but not pure egg or egg as the main component.

    I found that the New Zealand Govenment health promotion website had a great deal of information (lots of recipies for egg free cakes). A lot of the recipies use cola instead of egg!!! HTH

    tep, a friend of mine uses cola for a cake instead off egg, i'll try and find the recipe and post it.

    I have used egg subsitute from health food shops made by this company:-http://www.orgran.com

    It is based on potato starch, and very economical. I have made all sorts with it, but I generally use it now for recipes that are quite strong tasting - such as gingerbread.

    My sister used to make my nephew giant chocolate cornflake birthday cakes, because he was allergic to eggs AND wheat! The best one I remember was shaped like a hedgehog. Dead simple too
