    kids generally love eating the sweeter peppers raw too - give them slices with their meal and see - but not the green ones as they are more bitter. If you have any veg that you don't particularly like then chop it up small and cook it in your tomato sauces (or blitz it) a la Jamie's school dinners, the goodness is still there and you don't notice a difference in the taste if it's in a sauce but you and your kids will benefit.

    Sweet potato wedges are lovely, sprinkle with a bit or paprika, rosemary or cajun spice and don't put too much oil on them or they go soggy (and peel them ;) ) Carrots, parsnip and corgette can all be roasted too but courgette take less time that the root veggies. Courgette and onion fried up is tasty too.

    I love eating the red peppers like apples! Not keen on the green ones personally but I use them in SO many things! Last night I had omelette with peppers fried off in a pan and some peas (both were frozen although the peppers I buy fresh then chop up and freeze).
    Another alternative is Fajita's :) You can even just roast them in the oven till soft and serve. Chop finely and add to savoury rice works well too.
    Or again chop finely and add to salads :) yummy!

  • Peppers are really nice roasted in the oven or grilled under a high grill. If you do this and then marinate with red wine vinegar and olive oil they'll keep for at least a week. Very nice in salads etc and the oil and vinegar absorbs juices from the peppers and becomes a lovely dressing. I think green peppers aren't as good for this btw :)

    I also use a ridiculous amount of peppers!

    I put them in bolognaise, chili, curry, pasta sauces, lasagne, salads, roast them, stuff them - anything!

    peppers can be used in any tomato sauce. i particularly like to stuff them either with seasonned mince and tomatoe etc or and this is my favorite: cut them in half lengthways, put some thinly sliced shallots at the bottom, then some chopped tomatoes on top. then some feta cheese and bake in the oven until the cheese turns golden. Alternatively stuff 'em with what ever takes your fancy!
    oh and also as a topping on home made pizza.
    so many uses...
