I eventually got my veggie box delivered. I got sweet potato, courgettes,potatoes,onions,leek,green pepper,carrots, broccoli and cauli. All looks fabulous. Ideas please for nice tasty accompaniments for my kids. Really stuck for the pepper as we havent used peppers much. Thanks xx

I'll have the bell pepper, I must but 12-15 of them a week. As well as cooking them I also eat them like you would an apple - I know or others who do this too so it ain't just me. LOL
For cooking I: Add to shepherd's pie, chilli, bolognaise, veggie curry, veggie sweet 'n' sour, add them to salads, mixed roast vegetables, or oven roast and stuff with rice.

Not only are we both Methodists, and cheap dates, but I too eat peppers like other people eat apples!:T (I'm also developing quite a tase for shepherd's pie:o )You never get a second chance to make a first impression.0 -
I eat peppers like apples too, especially my fave the orange ones, yummy! I tend to get 2 out to make a meal, one to put in and one to nibble on

I love green pepers raw, but some people find them bitter and prefer them cooked. If you don't use them normally, I'd start with cooked.:D (or for an easier life, just send it to me!!)You never get a second chance to make a first impression.0 -
i prefer to cook green pepper as i find it a bit bitter if not.

I love raw peppers but only the yellow and red ones - the green ones are too bitter and hard to digest. I love the green ones in chilli and bolognaise type stuff though, and also stuffed with mince and rice.Jane

Thanks folks. Think I will roast the pepper and make wedges out the sweet potato. Carrot and courgette soup and broccolli and cauli cheese. Yum yum. Another nice idea for peppers is to slice them up with some onions and olive oil and put them in the tin with a roasting chicken. When it's all cooked, take the chicken out and stir some sour cream into the veges and chicken juices, serve slices of chicken and spoonfuls of the pepper sauce with rice.That man is richest whose pleasures are cheapest. When I had a red pepper in my box a few weeks ago I chopped it up and put it in the freezer to use at a later date. Will us it on pizza's, in stew's etc etc.
