If you agreed a price and you have not paid it all, you still owe the balance. They have 6 years to pursue you for it.

Is easy enough for them to give MORE than enough evidence to a judge for them to get bank/credit card statements.

Morally you owe them, legally you owe them. But they made a mistake, ask to pay the difference over a number of months to gain the fractional amount of interest.
