What is the best way to make pancakes? 
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
Is this a good recipe?
What toppings work best fed up of lemon and sugar?
What do you have with pancakes?

I never weigh ingredients for panckaes but I suppose my recipe would be about a pint jug of SR flour, a pinch of salt, 2 eggs and enough milk to make a batter the same consistancy as double cream.
The key is to beat it well then leave it to stand for an hour, and to have really hot oil in a non stick pan.
I use a ladle to put it in the pan so I know I'm always using the same amount.
I don't think you can beat just lemon and sugar, but DS1 prefers golden syrup and DH likes dried frut sprinkled into the mix in the pan. Sliced bananas baked in brown sugar or honey make a nice filling, as do apples and blackberries stewed with sugar. Left over bolognese is good for a quick and cheap savoury.

That sounds like a recipe for American style pancakes, the thick doughy ones. The British type are 1cup plain flour, 1 egg, pinch of salt and milk till it reaches the consistency of pouring cream (about 1/4 pint I think). It is best to rest the batter in the fridge for half and hour before cooking i into pancakes. Either add a litlle oil to the pan before cooking and let it get smoking hot or whisk a tablespoon or two of oil into the batter before pouring it to make it self lubricating.
I like pancakes with cream cheese, lemon juice and sugar, or stewed apple, bananas and nutella, honey and yoghurt, jam, mince for savoury or ham and cheese, mushroom stroganoff. I've got a Weight Watchers recipe for pancakes stuffed with a mix of cooked chicken, spring onions, tomatoes, sweetcorn and fromage frais.0 -

i get a bog standard plastic jug, put in 2 egga and beat then a bit, full jug up to 2/3rds with milk, beat again,then put in 6 or 7 tbsp plain flour. it should be a thick ish consistency.does my bum look big in this sig?0
