    try it finely grated in a leafy salad, really sweet and tasty (no need to drown it in vinegar)
    (use gloves!)

    beetroot is also great juiced (peel raw beetroot wearing rubber gloves ;) and juice with apple)

    don't drink too much of it though and watch out for the pink pee

    Hi

    Just had my 2nd veg box from a local farm and I am soooo pleased I got :

    2 x Leeks, 2 x small swedes, 6 carrots, 2.5kg pots, cabbage, cauli, 2 x beetroot, 2 x brown onion, 1 x red onion, bag of raddish, head of broccolli, iceberg lettuce, 4 x toms, bunch spring onions, cress, 1/2 cucumber all for £7.50 - I normally buy from Mr Morrisons so I thought this was a real bargain BUT I don't know how long to cook the beetroot - I seem to remember years ago having it warm with orange ?

    Any ideas ?

    I usually cut it into chunks, splash it with oil and put in the roasting tray with the potatoes on a Sunday so I guess they get done for about 40ish minutes.

    Why cook it? Just grate it and add to a salad. Much healthier and less hassle to prepare ;)

    I wash the beetroot. Do not peel.Place it in a pan cover with water and bring to the boil. Then reduce the heat and leave for about an hour. Make sure the pan doesn't boil dry. When the skin rubs of easiLy it is cooked. I use a knife to see if the skin will come away.Then empty the hot water and run under cold water. The skin should come away easily. Then i cut into slices and serve. Sometimes i sprinkle withh sugar depending how sweet the beetroot is. Also can cover with vinegar and put in a jar. It will last ages. I love beetroot on white bread. Yummy. Hope this helps.

    Theres a recipe on here for beetroot brownies which I've tried and must admit is rather gorgeous :D A sneaky way to get kids eating up their veg too ;) (of course Mum has to sample them before they get a look in...)

    Thank you all - I'm going to roast them today and next week make the brownies and pickle some soon.

    Luckily I have a 4 yr old that adores all veg - in fact the only ones he doesn't like are spuds and sweet pots so decided ages ago it must be a texture thing. For his breakfast today hes had a bowl of cherry toms ??

  • I love beetroot on toast with melted cheese. It sounds disgusting but tastes delish.....honestly! I love beetroot.

    Sounds like my niece - she'd rather have broccoli, cauliflower and cabbage than chocolate and sweets any day.
