beetroot in my veggie box

i love fresh beetroot.
i just twist the tops off but leave a couple of inches poking out.
put in pan
boil till soft
then peel and cut
i've never put anything on it and its lovely0 -
I agree about roasting them - with a little olive oil, some garlic, rosemary. Yum
Also, peeled - I use rubber gloves! - and then grated raw for salads.
I LOVE beetroot and I'd be over the moon if I got a heap of it in my veg box!0 -
Spiced Beetroot
3lb Cooked Beetroot. Boiled in skin until tender (I pressure cook mine)
1 pint vinegar
6oz Brown Sugar
1 tbsp made mustard
1 destsp salt
1 teasp pepper
Put ingredients in a pan and bring to the boil. Cool, then pour over cooked sliced beetroot. Ready to eat in 1 week. (if you can wait that long):D
I bought some today from the local market (home grown stall) it’s cooling right now!!!!0 -
I microwave them till they're not quite soft, then slice them and fry them in butter with a bit of garlic till they have golden edges.

Roasted beetroot and then when it comes out of the oven sprinkle with feta cheese!!0

Beetroot soup IS gorgeous - and it looks so amazing when you serve it at the beginning of a dinner party with a dollop of soured cream in the middle. The colour of it is so intense - it definitely gets people talking!
