Personally I wouldn't use them for bathrooms or bedrooms as sound does travel as there is an obvious void . The idea is good but you would need to use sound proofing sheets such as Acoustilay , they use to have a system where you had a very thin layer of lead backed with foam each side of the lead, overall it was only about 5 mm thick overall.
This was fixed to the studwork behind the Gyproc and had excellant sound deadening qualities but took up next to no space.0
