YOu can use it to make a kind of coleslaw.

Usually you make coleslaw with white cabbage, but red is just as nice, and gives it a cool colour.

Essentially finely shred half the cabbage, 3 large carrots and a medium onion (you might find it best to do this in a processor), then mix with either mayonnaise or thick yogurt, seasoned with salt, pepper, lemon juice and mustard to taste.

Much better for you if you use a low fat yoghurt, and tastes infinitely better than stop-bought

    Yum!

    Hi squirmy,

There's an earlier thread with lots of ideas that should help so I've added your thread to it to keep the suggestions together.

    Hi Squirmy

You could put red cabbage in our favourite soup-
1 large splash of olive oil
Fry a chopped onion in this
    Add a chopped carrot
Add 1/4 finely chopped cabbage (any colour)
Pour in 1 tin of tomatoes and herbs, and 1 pint of water
Add 1 tsp salt or stock powder
Simmer until veggies are nearly soft.
    Add a handful of macaroni.
5 mins before the end of the cooking time, add 1 tin baked beans.
    Taste and season etc.
