Just popped into Sainsbury's and Taste the Difference Christmas Cake kits are now reduced from £14.99 to £2.00. They are on the baking section. I decided not to buy as I don't need one, but someone might find useful.0

I used all the ingrediants out of one of my kits, except the flour and boiled with 150mls port for 20 mins then left overnight - made the most divine mincemeat for mince pies ever! - oh and I chopped the almonds rather than leaving whole.....0

Just cut into sainsbury cake kit today and was v good - substituted lemon juice for jack Daniels which worked well!0

Hi, I purchased the Taste the Difference Christmas cake when it was reduced before Christmas - it is THE best Christmas cake i've ever tasted! Unofrtunately i've thrown the packet away and have no idea what the quantities of ingredients were - is there anyone out there with an unused pack who can list me the ingredients and amounts please? I shall be eternally grateful.0

I've just made it, so have got the packet here. It doesn't actually list the quantities of any ingredient but the flour, but it has percentages, so based on that and the flour weight I have worked out the ingredient quantities to be as follows:
170g plain flour
1 kg of soaked mixed fruit (they have got sultanas, raisins, glace cherries and candied peel, soaked in Armagnac)
3g of mixed spice
60g Marcona almonds
170g dark brown muscovado sugar
plus
3 medium eggs
170g unsalted butter
1 unwaxed lemon
Method:
Beat butter until soft, add sugar and cream until light and fluffy.
Add the eggs one at time and beat until smooth.
Finely grate the lemon and add the zest and juice.
Add the mixed fruit and almonds and gently mix with a metal spoon.
Add the flour and spice and stir until mixed.
Put into 8 inch (20cm) deep round cake tin that has been double lined with greaseproof paper and greased with additional butter. Then put 2 layers of greaseproof paper on top and cut a small hole in the centre. Bake at 150C, 300F, gas mark 2 for 3 and a half hours or until springy and skewer comes out clean. (In my fan assisted oven it was done after 2 and a half hours).
Hope that is right.
I am going to be eating mine when it has cooled (or sooner if I can't resist) so hope it tastes as good as it looks and smells.0
