Need to use up my freezer challenge

  • I too have been 'running down' my freezer and I just have a list by the kettle and only buy what's on the list when shopping, and every morning get out of the freezer what I am having for dinner that night. I have stopped buying althogether anything that could be made into a dinnner and am determined to eat what I have before buying more last month I almost halved my shopping bill and this month so far have only spent on fresh fruit and veg and milk but NO MEALS whatsoever You have to be strong and resolute as its so easy to think 'Oh I'll get that as its reduced and a bargain'.Don't do it, walk away and think of emptying you freezer first.Just think of all the money you have spent buying it to eat in the first place and eat it upYou probably have enough food there to last you until past Christmas at least so an extra couple of weeks housekeeping will help when the January bills come dancing over the doorstep in the New Year

I did a freezer inventory today and found bags of roast pork, lamb, beef and chicken, and cooked ham (all in small chopped pieces)

I also have 2 new bags of frozen chopped spinach that I bought twice (oops) and a piece of (uncooked) turkey breast (OH hates turkey....)

I have found this for turkey and spinach, but would love more inspiration....
  • Hubby whipped up a spinach omelette last night for tea after buying 2 whoopsee bags of spinach this week.

  • Turkey and spinach curried. Not necessarily together, unless you want to. I would add the spinach to potatoes in a sag aloo, then maybe tikka the turkey.
    Put the kettle on. ;)

  • I want to make the turkey lasagne, so that takes care of the turkey and a little spinach-has anyone ever used cottage cheese in a lasagne as in the recipe-as it's not one of my favourite things?

Planning on making chicken, pea and herb rice, from Valentine Warner's latest book, so that sorts the chicken. We aren't really quiche fans, but could use the ham in omelettes and carbonara/similar pasta dishes. Could do with inspiration for the beef lamb and pork, I usually make curry, but something different might be nice. I was thinking on making Nigella's mixed meat pilaf with some of the pork, but it doesn't have much veg with it-it's pretty rice heavy.....
