I take your point. Yes a home prepped meal that is lightly cooked would be better than commercial food because of the high proportion of grains in the commercial food. Raw is better than high quality commercial tinned food, which is better than low quality tinned, which is better than dry biscuits. Even within a raw diet whole prey is considered better than pseudo prey: all the nutrients are already in the correct proportions after all!
To start a transition you cut the meat into cm cubes and mix with their tinned meat, and slowly increase the amount of raw. If at any point they refuse it you've moved too fast, and need to go back a step. Ways of getting reluctant cats to eat are things like blended meat drizzled on their fur which they eat as they clean off, or "accidentally" dropping a bit on the floor while chopping it and pretending not to notice... stolen meat tastes better than freely given meat apparentlylol
