Ok Just to you lot know, as it was mentioned earlier, the 'wraps' are larger and in packs of 6. The 'tortillas' are in packs of 8 and are smaller.
As my family are mexican, I eat a lot of mexican food. The old joke of it being all the same just folded or cooked a little differently is true of basic Tex- Mex food. Which OEP is. I haven't re-read this so it the grammer is wrong that is because I was too lazy to sort it out!:o
Some ideas:
Tostadas- Spray the tortillas with a little frylight or a rub with a little olive oil and cook in the oven for about 3-5 minutes ( until golden) on about 175c. Then spread on some beans and vegetables ( lettuce, onions, tomatoes, sweet peppers, jalapenos, grated cheese etc) and eat. I also put on some creme fraiche on the top ( but you could also use soured cream)This one can be a bit messy and there is a nack to holding it in one hand without it all going al over the place. You can of course also put meat ( taco mince - beef, pork, chicken, turkey) or shreadded chicken or pork etc. ( but you need the beans on the bottom to make everything stick and not fall off straight away.
Quesadillas you can make these in the microwave or oven or if you are lucky you may have a quesadilla maker (I have one it was about £20) You make some taco mince or filling. I like to use left over chicken and spice it up a bit and fry up some onions & sweet peppers. You spread the filling on the tortilla add some cheese and place the other tortilla on top and then cover with a plate and place in the microwave for about 2-3 mintues on high it must be covered or it will dry out and the tortilla will go very hard and not nice. If in the oven just spray the top tortilla with cooking spray or a little oil. and cook in the oven until the cheese has melted. Slice into pizza slices and eat with guacamole and soured cream (creme fraiche) on top.
( if you like more spice add some jalapeños or chili flakes 'pico de gallo- see bottom).
Burritos These are simple to make. You can make them as a quick snack and freeze them to heat another day or for breakfast as well. Fillings ( bean & cheese, egg and potato, egg and sausage, eggs and veggies, taco mince and veggies the list is endless) Simply lighly warm you tortilla and place your filling in the centre. You can fill quite full but make sure you have room to fold. fold in the left and right sides and them 'roll' the whole thing up to make a parcel. Then place in the oven to heat through. It is best to seal the edges with a little beaten egg and place 'seam down' so that the item doesn't open back up. Spray with a little cooking spray or rub with a little oil and once toasted you are done.
Chimichanga This essentially is the same thing as a burrito but you deep fry the hold thing. You need to place it in the fridge first to ensure it will not open up and fill your fryer full of the filling. Don't put egg in the theses ones as it can be a bit...yuk. But any kind meat, cheese, veggie combo is good here. Even mexican rice and mince is since.
Enchiladas Now what they call enchiladas over here is not actually what they are. Over here enchiladas are just upside down flour tacos with sauce on top. Actual enchiladas are made with actual 'corn tortillas' made from corn maze or 'masa'. The 'corn' tortillas over here are just flour tortillas with a little bit of masa to colour the tortilla and by no means taste or work in the same way. But I would say if you want to make 'real' enchiladas then look on line for corn tortillas and there are several places on line that sell them about £2 ish for a pack. The corn tortillas also also freeze well. Just like the flour ones do. And make excellent corn chips (crisps) nicer than the old doritos or anything like that. Fresh corn chips are GORGEOUS! Anyway I guess over here you just put the filling of a taco in , flip it unside down and them poor one of those jars on it. It is a bit mushy but I am sure a lot of you will like that kind of thing.
Taco Salad If you have either two metal bowls or two round containers you can place in the oven you can make a tortilla bowl. You can also use a pyrex bowl place it upside down on a baking sheet cover the bottom lightly with oil and place a warm tortilla over the bottom ( so it is it concaved or convexed which ever you choose) and heat it in the oven till toasted. This will form your salad bowl ( whatever veggies you like). Place your salad in the 'bowl' with a bit taco mince or spiced chicken or meat and add some dressing and you are off. Once done you can eat the bowl.:-)
Fajitas I am not going to preatch tot he converted so I will leave that one alone.:)
Tacos Again no preachin' here
Fillings: If you are veggie, bean and cheese always works. Spicy chicken, turkey, pork or beef.
You can also spice things up with what is called 'pico de gallo' which is a mix of fresh coriander leaves, chopped tomatoes, chopped onions, fresh chopped green chilies and salt and pepper. This is also known as Mexican ketchup as they eat it on everything....and I mean EVERYTHING:-)
Guacamole - just in case some of you may not have gotten the jars ( as I like mine fresh) you can make is simply. Mash fresh avocados, add some garlic powder and onion granules to taste, chopped onions, chopped tomatoes ( make sure they aren't mushy) and fresh coriander, and some lemon juice. You and leave in or take out what you don't like. Personally if in a rush I only use garlic powder and onion granules. I am allergic to raw tomatoes so I don't put those in either.:-)
Anyway I hope this helped. I am not trying to sound like a chef cuz I am not but this is how we roll back home so thought you might like some ideas on what to do with out oep stuff.0 -
