Unless the road was gated or with a cattle grid there shouldn't be cows on the road. I hit one on the A1 some years ago, although I wasn't the first to hit it and it was already dead.
I had legal cover (Uninsured loss recovery) with my insurer and they claimed off the farmer (or insurer). I got my NCD life back and the excess that I'd had to pay the garage directly, after a few months.
That's exactly what legal cover is there for, so use it if you have it. If not, you may have to do more work yourself or use a no win no fee solicitor.We need the earth for food, water, and shelter.

If it's common land with grazing rights that happens to have a road across it (lots of these where I live) then the animals have right of way and it is the responsibility of the motorist to drive with sufficient caution to avoid them. There should have been signs warning of animals on the road. If not then you may have a slim chance of a claim, if signs are present then you don't have a hope.0
