All the fudge recipes seem to call for brown sugar.
Just found one for peanut brittle so i may try that.

'Crunchie' - honeycomb dipped in chocolate.
Honeycomb recipe is: a cup of sugar, melt in a large, heavy bottomed pan (no water) over a low to medium heat. Keep stirring and remove immediately from heat if it starts going too dark. Burns really easily! It will initially form lumps, but keep stirring these into the melted bit. As soon as it has melted, stir in a quarter teaspoon (or large pinch) of bicarb. It will froth up. Immediately pour into greased baking tray and leave to set. You need to work fast as it starts setting quite quickly.
Break into pieces and cover in chocolate. If left un-covered it will go sticky in a day or two, even in an airtight container. (or maybe sooner if it is as humid where you are as it is here!)Trust me - I'm NOT a doctor!0 -

Ooooh! Just had a thought! I was wondering what to do for dessert tomorrow for my guests and I remember a yummy recipe that this would be great for.
Whip up some double cream. Bash up some crunchies leaving wee bits and some chunks. Mix through the cream and stick in the fridge.

I've got a Dougal's (Magic Roundabout) cookbook from my childhood and it gives a recipe for chocolate fudge that I remember making several times (it is rich!). Here is the recipe
2 oz plain choc
1 oc margarine
8oz icing sugar
1 tablespoon top of the milk (hmmmm most people don't have milk in glass bottles anymore, unsure what to say to substitute -hopefully someone else will help there)
few drops vanilla essence
Break choc into pieces and put in saucepan with marg on low heat to melt. Take saucepan off heat whilst you sift icing sugar into bowl, pour melted mix and other ingrediants on top. Mix together. Press fudge onto suitable plate or tin and leave to cool until set.0 -

I was going to make some fudge today as I got a 2 kg bag of whoopsied demerara sugar yesterday so have to use it up.
Think some plain, and now some dark choc fudge are calling me.

What can i do to sort out a batch of peanut butter fudge which is grainy.
It has set but it is very grainy (obviously not beaten enough)
Can it be saved or must I bin it?0 -
Can you reheat it and then once less grainy set it again?0
