Update: I have just made two batches of marshmallow, there is one with 60ml vodka and 180ml water (25%) and then one with a different recipe with 100ml vodka and 200ml water (33%).
They are setting now and actually don't look different to the marshmallow i made last week, will update again in a few hours when i turn them out. Though the 33% one is worrying me slightly, all i could smell was vodka while whipping it, and it wasn't a ni8ce vodka smell, far too strong, but hopefully it won't be that strong in the finished thing0 -

No problem,
There are two different ones and they both worked so ill post them both;
21g unflavoured powdered geletin
240ml ice cold water (used 180ml water/60ml vodka)
340g granulated sugar
240ml golden syrup
1/4 tsp salt
1tsp vanilla essence
Put geletin in a bowl with 120ml of the water (60ml water & 60ml vodka)and set aside
Add the sugar, syrup, salt and remaining water into a pan and put it over a medium heat and cook for 3-4mins until they are combined.
Turn the temp down to low and continue to cook until the mixture reaches 115degrees C or gets to the 'soft ball stage'
Immediately remove the mix from the heat and pour it slowly down the side of your bowl with geletin in mixing with a hand mixer on the slowest speed.
Once all the sugar mix is in turn the speed up to high and contuinue to whisk for approx 15-20 mins until the mix thickens and cools slightly. Add the vanilla at the last minute and transfer to a greased tray lined with icing sugar. Dust the top with icing sugar and leave to set for about 3 hours.
Turn the marshmallow out and cut into portions, dusting each side with icing sugar.
14g unflavoured powdered geletin
300ml ice cold water (used 100ml vodka and 200ml water)
400g caster sugar
Soak the geletin in 150ml water (i used 100ml vodka/50ml water) and set aside
Combine the sugar and remaining water in a saucepan and heat on a low heat until the sugar dissolves and the syrup goes clear (soft ball stage)
Combine the geletin and sugar water and beat with an electric mixer until thick and foamy.
Pour into a lined tray, dust the top with icing sugar and set aside to cool for at least 3 hours.
Cut into portions and dust each side with icing sugar.

well they have both gone down well, the 33% one had a strong smell but its not strong to eat, i am going to try the 33% recipe with 50% i think to see if you can get it any stronger0

mmm I love flavoured mashmallows and am now drolling at the thought of cherry brandy mm for crimbo, or cointreau ones, or gin and ones replacing the water with tonic and squeeze of lime, or malibu ones rolled in coconut......People seem not to see that their opinion of the world is also a confession of character.
