My dh is coming home tomorrow after being abroad and I want to cook us all something nice. I have taken some of my whoopsied sea bass from the freezer, as I know he won't have had any fish while he has been away.
What on earth do I do with it? I am going to pan fry it, but how do i make a meal of it? What goes well with it?
Off to get wee one from school now, can't wait to see all your lovely suggestions when I get back!!

a super easy option would be steamed veggies and coucous made up with a bit of garlic butter and chopped parsley. I guess it depends how much time you want to spend in the kitchen!0

Definitely not cous cous! His Mum will have been making that for him at least twice a week!

I'd go green beans, and garlicky fondant potatoes (see BBC Good Food for a brilliant recipe - but only use half the stock, or it is really salty).0

That sounds good! Then I could prepare it in advance, and bung it in the oven when we get in. Could I maybe partly steam the veg too? And, erm, is it okay to pan-fry sea bass? I have never cooked or eaten it, but we are trying to learn how to cook and eat more fish. Nicest way that we all like seems to be dry-frying on my griddle pan. How long do I do it for? Green beans will only take about 5 mins (yes they are out of season, but look for frozen). The garlicky fondant potatoes are so easy, and need minimal attention.
Have no idea about fish - I'm a bit scared to tell the truth, but wish I was more knowledgable re fish.0 -
Had a look at the garlicky fondant spuds. They look nice, but also had a look at the dauphinoise...... I have cream that needs using up, so I might go with those. I can make it in the morning, then re-heat.
I need a bit of colour on the plate...... maybe if I cut some batons of carrot, steam them, then I could maybe toss in a bit of butter, garlic and herbs and let them finish off in the oven with the spuds. I seen a a lovely recipe for this on tV one day
Squeeze a lemon over the seabass and pan fry with garlic cloves
Chop some tomatoes and spinach
Cook Bulgar wheat, and add the tomatoes and spinach into this.
Serve with side Salad

I'd pan fry the bass so I could be sure it would not stick - I do meat on a griddle but fish seems so delicate and breaks up easily. Your carrots and green beans could both be tossed in butter with herbs. You could also use beans, carrots, mushrooms, steamed then coated in a bit of creamy sauce and topped with potato slices. Cook in the oven until potatoes are cooked with brown bits on top. You could also cook the bass with the beans and carrots in a foil parcel in the oven with a bit of butter and lemon juice - like you would a salmon steak, just oil the foil first as bass is not a fatty fish and might stick.
