Sea Bass is a lovely delicate fish - so I would be very wary of using an extremely STRONG flavour in the side dish in case it overwhelms the flavour of the sea bass.
I have served it with a nice cream sauce flavoured with Parsley or Dill (not both together) and with honeyed carrots or asparagus, and some roasted potatoes. (also with chips tbh).
I usually serve it in the summer tho as IMHO it goes so much better with salads as a pan fried fish..............but, each to his/her own!

Thanks guys. Can't wait til the summer, I'm afraid!!! Got it in the freezer from a great whoopsy trip the other week (50p) and really want to try it. Thanks for the tip about not doing strong-flavoured sides with it. I think I've decided on pan-frying it, dauphinoise spuds, carrots and green beans with some parsley butter.
Goodness, I hope he likes it after all this!!!

I'm going to try them too, just not tomorrow. Looks like they would be perfect to use up all the small spuds I dug up on the allotment!!

rosie - that sounds fantastic! A perfect balance of flavours!!!

sorry if I sounded a bit pedantic about doing sea bass in the summer! its just that OH doesnt like salads in the winter! and to me sea bass is the perfect fish for a summer salad meal - if it was up to me I would eat sea bass with salad all year round!
