i just make up normal pancakes.(if i'm lazy then i use the tesco value 11p pancakes mix) then i stuff with anything i fancy. (or have in cupboards) baked beans in great put a spoonful in , roll up pancake put grated cheese on top and bake in oven till golden serve with jacket spud. or i fry in pan mushrooms , peppers, beansprouts , onion , spring onions , peas , sweetcorn ( again anything reall) again put in pancake roll up. but i make a cheese sauce pour over so just covering the pancakes and then add bit more grated cheese and cook. i will serve this with new pots , jacket or rice.

i did a while again chicken , prawns , rice , peppers , beansprouts , waterchestnuts , sweetcorn and peas and that was very very yummy.

Boiled egg and soldiers, or boiled egg and buttered bread chopped up into smallish pieces and all mashed together. Good comfort food.
Risotto - takes quite a long time to cook, but yummy and filling and pretty cheap, good for using up odds and ends of veg, meat etc.
    Pasta and pesto.
Roast chicken - then keep the leftover meat for lunches/risotto/stirfry, boil up the carcass for stock etc. Works out cheap on a per-meal basis even if you use a nice free range or organic chicken. Chuck a couple of carrots in the roasting tin and they come out absolutely gorgeous.
