tinned tomatoes on toast (cheap, quick and healthy)
beans on toast
low fat/quorn sausages and value instant mash
jacket spud with tuna / beans / soft cheese
homemade soup
pasta with tuna, mayo/yoghurt & sweetcorn
tuna with tinned toms, veg etc
stir fry veg (make sauce from soy sauce, honey, garlic & chilli)
chilli / veggi chilli

Marinara Sauce
3 tablespoons olive oil
130g finely chopped onion (1 medium)
50g finely chopped celery (1 stalk)

1 700g jar passata (I use an organic one from Morrisons... around 65p)
1 teaspoon sugar
1 tablespoon minced fresh oregano

125ml dry white wine
Heat oil; add onion and saute for 10 minutes. Add celery and red pepper and saute another 10 minutes. Add garlic and saute five more minutes. (It's really important to saute the veg until they're very tender and the onion is golden... if they start to brown or burn, turn the heat down.)
Add remaining ingredients and bring to a simmer. Cove, reduce heat to very low and cook for an hour (or longer).
Can be frozen.
If you're counting calories, the olive oil could be reduced though the flavour won't be quite as nice.

HM lasagne and potato wedges
jacket spud with beans and salad

cauliflower cheese and bacon
toad in the hole
toasted sarnies in the George foreman grill
steamed salmon fillet - my absolute fav with roasted veggies yum yum yum
beans on toast with a bit of grated cheese on top

hm wholemeal bread baked on a bakestone with
hm pea and leek soup followed by something like eves pudding and custard
just lovely and comforting on a cold day
in fact I`m going to make all that for lunch now. I haven`t got any fresh bramleys but I de-hydrated some and I`ll re-hydrate and use those0 -
Spaghetti tossed in extra virgin olive oil, garlic and fresh chilli.
Spaghetti Bolognese. I make plenty of Bolognese sauce and use leftovers for Lasagne the next day.
Pasta Bake is always good for using up bits and bobs left in the fridge.
Tuna salad.
Homemade soup.

That reminds me... you can make a cheaper alternative to Spag Bol by using Corned Beef... it's very tasty, I learnt this from my Italian in-laws.0 -
Our cheapest is Pasta with pepper and tomato sauce made with huge 3kg bag of pasta from Tesco for £1 (probably does 20-30 portions) 1 jar of Lidl roasted peppers 99p (save the oil for salad dressings), quarter of an onion, 1 clove of garlic and 2 tins of value tomatoes 19p and a slosh of red wine if you have it.
Just fry onion and garlic, add tomatoes and peppers and wine. Boil rapidly and whizz with a blender. Stir through pasta et voila!
By my reckoning if you made enough sauce for the whole bag of pasta , ie 20 meals at 4 generous portions per meal it would work out at 32p per person.:D
I haven't accounted for wine in that as it's an optional extra and remember you will have lots of yummy red pepper oil left over. And you could add a few fresh or dried herbs if you have them.
Hope this makes sense and that my maths is right. Please don't shoot me down in flames if it isn't.:o
Also, I usually add extra just past their best veggies from the fridge and whizz them in. It's a great way of hiding good things. Oh won't eat celery and kids won't eat courguette but both went in it last time and no one suspected a thing.0 -
Baked bean and chilli toasted sarnies.
Gypsy toast (bread dipped both sides in egg and fried) and chips.
Toad in the hole.
Cottage pie.
Chicken risotto with the leftover chicken from the roast.
Potato salad with frankfurter and onion chopped up and mixed in.
