    I used to do sprouts toastlady but I was never particularly successful- I think that my house is so warm (I'm a lizard at heart😉) they always seemed to go mouldy despite me following instructions to the letter 🤔 hopefully joedenise will have success! 
    The injera took a lot longer to ferment than normal - dh had the kitchen door open most of the time (he doesn't have my lizard tendencies and is working from home 🙈) so it was a lot cooler than it's used to. However, it was done by Sunday and was lovely!! 😍😁
    I've got some red grapefruit, oranges, apples, leaves and potatoes to use up so am planning on doing a spaghetti bake (onion, garlic, tin of tomatoes, couple of grated apples cooked for around 10 minutes then mixed into cooked wholewheat spaghetti, topped with cheese and baked for about 15-20 mins till the cheese has melted) and serving it with a citrus and balsamic beetroot salad and leaves. I'll also make a Mediterranean potato bake - onions, garlic, chopped potatoes (par-boiled for 10 mins), olives, sundried tomatoes, thyme, chickpeas and stock -  for tomorrow. 
    The rest of the week will be freezer stuff - I'm hoping to clear as many unidentifiable stuff as possible over the next couple of weeks!! 😉😂

    Still not started spouting anything yet.  Keep putting it off as been in the garden quite a bit the last couple of weeks with the weather being so good.  Have got various veg started off including lettuce, peas, tomatoes, courgettes & butternut squash.  Also some herbs.

    Mediterrean tray bake sound lovely.  Haven't done anything like that for quite a while.  Think that might be something to go on the menu plan next month!

    Decided it's time I started getting something sprouted so I've put some dried chickpeas into soak so at least I've made a start.  Having said that I've never actually sprouted chickpeas before but from what I've read it only takes a few days until you can eat them!

    I made houmous the other day and I used vegan mayo in place of tahini as I'm not a fan. I had it on wholemeal toast with sliced cucumber.

    I made burritos today with tortilla wraps. I had some leftover Mexican rice and beans and I wrapped them in the wraps, baked them in the oven and had them with Frank's hot sauce and salsa on top. Very nice!

    Apples in spaghetti. I've never heard of that!

    I'm not a big fan on hummus, although I do make it occasionally.  I'm more inclined to make falafels with my dried chickpeas.  I make them based on a recipe by Tori Avery as I'm following Slimming World so I bake rather than fry them and to be quite honest haven't found the need to any any chickpea flour to the mix.

    I'm making vegetable biryani for dinner tonight, using up the last of a batch of spiced veg I cooked a couple of months ago.  Will definitely have to make some more as it's a great go to cheap meal!

    I've never had fruit with spaghetti either and can't say it appeals to be quite honest!
  • I know it sounds odd but it's seriously  nice! 😉 The apple counteracts the acidity of the tomatoes and adds a freshness to the dish - even my omnivorous friends like it - although no one has known about the apple as I've never gone through the ingredients with them! 😉😂

    My lentil sprouts have turned out well and and are currently in the fridge. I made way more than I intended. The chick peas are taking longer, will give them another day or two. They are still fine though and not mouldy....yet! 

    Glad that your injera worked out finally Squirrelgirl. Once lockdown is over, I will certainly see if any of the bigger supermarkets here have teff to give it a try. Your spaghetti bake sounds interesting, never put apple into a cooked savoury meal that I can think of. Laughing at you being a lizard, saw my first lizard of the year here yesterday in the garden, so it must be getting warm.

    I had spaghetti in a lemon sauce with capers, olives and walnuts last night, it was lush, but vegetarian, not vegan. Lunch was soup from the freezer, and sandwich with grated cheese and grated apple in mayo. 
    Can't decide whether to do a pizza or roast veg bake tonight. Made up some coleslaw earlier and added some chopped pineapple for a wee change, so will be having that with whatever I decide on.

    In the '70s my Mums curry always contained apples and sultanas, which were the best bits. After a few years, she started to add potatoes as well,  which was  disappointing as you thought you were about to eat some scrummy apple and it would be a potato instead :disappointed:

    The spaghetti in lemon sauce sounds nice ToastLady.  How do you make your lemon sauce, there seems to be loads on variations on line?

    BB - I only had Vesta curries back in the 70s!  I wasn't much of a cook in those days!  There was lots of frozen & packet dinners.  About the only fresh food I really cooked was a roast at the weekend!
