Here you go moguline:
Ingredients
1 cup split red lentils (soaked overnight)
2 cloves garlic
1/4 tsp ground cumin
1/2 tsp smoked paprika
pinch turmeric
1/3 cup water
2 handfuls of baby spinach leaves (finely chopped into ribbons)
1/2 tbsp oil for frying
Instructions
Blitz all the ingredients (apart from the spinach & oil) in a high speed blender until you achieve a smooth batter. Add a little more water if needed.
Mix the spinach through the batter.
Heat the oil in a frying pan over a high heat. Reduce the heat to medium and fry tablespoons of the batter for approx 2 mins each side
Serve and enjoy!
Very simple and pretty tasty but the recipe is meant for babies so more spices etc definitely a bonus for grownups!0 -

mental month and I've had very little time!!
So, made a 'potato pie' yesterday with mashed potato mixed with green tomato chutney and baked in the oven for 30 mins. I have asparagus and broccoli in the fridge so will serve it with those and some seitan if I get time to make it.
I had some leftover cooked beetroot in the fridge, so I have pickled that in some of my homemade raspberry and blueberry vinegars and will serve that in a couple of weeks warmed with a quinoa and chickpea salad, leaves and carrots cooked in maple and Dijon mustard.
I really have to minimise my food shopping for the next 15 months to finish the major house project so this particular board will help keep me focused - I think that cooking three times a week will do us with our eating habits so I'm going to really be able to minimise costs hopefully!!0 -
I'm not vegan but enjoy eating some vegan foods. There have been some good ideas in this thread. Just wish my DH was a bit more willing to eat meat free.0

Not much happening food wise here - I've not been feeling great so unfortunately, I've had a bit of food waste
On the plus side, I made the seitan the other day - it was the first time I'd done a light version and I used a bit too much of this new stock so it was overly salty but the flavour was amazing!! I finally managed to get the perfect texture too.....I cooked it in stock in the oven, then steamed it, then baked!! Definitely one to make when it's a full on cooking day! I really was immensely pleased with it though so will do a whole batch and freeze it :j
I've got to go through the freezer with dil later to sort her some space out so it gives me an opportunity to get more organised in there.....I want to get everything used up that has been in there lurking for a while so that we can utilise the space properly.
Not sure if I'll be cooking today - very much depends on how this lurgy goes0 -
I bought some fruit yesterday so tonight I will be eating puy lentils and quinoa topped with avocado; grapefruit, orange and pomegranate salad; warm asparagus, beetroot and sprouting broccoli with a Dijon and maple dressing and salad leaves.
The fruit was purchased yesterday - everything else is from stores.
We went to a 'global kitchen' restaurant yesterday for dd's birthday - discovered that my grandbaby really likes veggie sushi so I'll be making him some next time he is over :T just need to remember not to load it with wasabi like I normally do!! :rotfl:
I am going to finally sort the freezer today - it's been something that dil and I meant to do several days ago but other things have just got in the way - once it's sorted, we are going to have at least a week where all we eat will be from the freezer then I can defrost it and do a big batch cooking day to save on fuel and time0 -
I've been running my pantry down recently as there were a few lingering things in there. I'd finally eaten all the things I been ignoring and did a nice stock up this week. I treated myself to a bon bon and a spaghetti squash too so looking forward to good old stew this weekend.
We got rid of our freezer last year and it was the best thing I could have done for managing food.0 -

That's a really interesting thought!!I'd never considered that really - I suppose that we all tend to overbuy as we think that we will just chuck the excess into the freezer then end up not using it and buying all over again
I wouldn't be without a freezer though - I do use it for freezing fruit for wine and as I buy in bulk, some of the fresh stuff has to go into the freezer for later use. I also batch cook things like seitan as it can be time-consuming to cook - but I do think that I may consider a smaller freezer when the current one needs replacing.
Speaking of which....I didn't get round to sorting the freezer again - I had to go and do a visit for work so it all went a bit pear shapedHowever, I have spoken to dil and it will be done by the end of today - we're on a mission!! :rotfl:

I used to do lots of batch cooking but it turned out it didn't really save me much time, money or washing up so the benefits were few. The ice box we have with our undercounter fridge has enough space for a batch of pitta or dough, some veg with a bit of space for some bean burgers or pastry etc. It does mean I use things up instead of hiding them in the freezer, something I was very guilty of before.
