They are quite delicious - I'll be over to help you, and am very jealous. Look up any recipe which has raw prawns in (tho they're bigger than most prawns) and cook like that eg stir fry, steam, etc etc.until they are pink. (Big supermarkets sell them in an unappealing-looking brine, and they're just like big shrimps/tiny lobsters) And good on him for saving the river banks and native crayfish :T0

mmmm.. crayfish, tey are like big juicy prawns!! Id say treat them like lobster.. If you cant bear to cook them alive, my dad always freezes them first as he says it makes them go to sleep.. whether that is true only the crayfish/lobster knows and none have come back to tell the tale...

Yummy. Crayfish are the freshwater equivalent of langoustines.
I would quickly cook in boiling water, drain, then stir fry with a little olive oil, garlic, ginger and spring onion. Add a splash of soy sauce before serving.0 -
River cottage was on about those the other day. Hugh FW was cooking them.
It is the spring river cottage on channel 4 on demand service.

thanks for all your replies, sadly it will be frozen fish and chips tonight as he didn't catch any!!!typical as when he doesn't want to catch them thats all he does catch poor boy!!!0

Well for when he does catch some, I would put in freezer first as suggested above and then put them in boiling water until pink. Fry in olive oil and garlic or as suggested above with ginger/soy sauce. Delicious.0

oh what a shame! I saw the HFW prog with the crayfish and they looked delicious - and by catching them you're actually helping the environment - win win!weaving through the chaos...0 -
I've got some of these on offer. (Sainsburys.) I have had them before a couple of times with prawn cocktail sauce, but last night I had prawns with jacket potatoes and prawn cocktail sauce, so I was wondering if anyone else had any ideas?0
