If you want to make batter as crisp as the chippies, use only self raising flour and cold water and a pinch of salt. Dip your fish, or king prawns or onion rings into a plate of flour first to get the batter to stick. Place in very hot oil to fry.0

Buy "The Curry Secret" by Kris Dhillon for only £3.99 at amazon. If you follow the instructions you will get takeaway style Indian curries. I used this yesterday and made Chicken Dupiaza, Lamb Passanda a mixed vegetable side dish, peas pillau and naan breads. All the recipes except for the rice and naan bread were from the book. I used my own versions of "cheats" naan and pilau rice as they always turn out ok and are a lot less faff than those in the book.
Cheats pilau rice.
1 part long grain rice
2 parts water - use the same measure for both. I usually ses a coffee mug of rice for 2 people to 2 mugs water.
1/2 tsp turmeric
1 dsp oil
1 small sliced onion
Seeds from 3-4 cardamon pods
Lightly crush the cardamon seeds
Heat the oil and add the crushed cardamon seeds, give a quick stir.
Add the sliced onion and stir fry for about 1 minute till softened.
Add the rice and give a quick stir to combine everything.
Add the cold water and bring to a vigourous boil. Boil hard until the water level falls below the rice level and "pits" appear in the rice. Cover with a tight fitting lid, and if using an electric hob turn off the heat, if using gas turn down to the lowest setting.
Leave for about 10 minutes without removing the lid.
Remove lid and use a fork to fluff up the rice.
Cheats Naan breads
Self raising flour
Natural yoghurt
Mix the flour with enough yoghurt to make a pastry like dough. Break off chunks and roll out to just under 1/4 inch thick. Heat the grill. Place one naan bread at a time under the grill. They will puff up, when the first side is lightly browned, flip over and cook the other side. Keep cooked naan breads warm by wrapping in a clean tea towel till they are ready to serve.
Just checked out the link above to curry queens recipes and they look very similar to those in the book, so you could try following them.0 -

We don't often have a take away - but when we do I only order the 'meals' ie - not the rice, prawn crackers, poppadums etc as cheaper to buy from the supermarket, but then divvy up the meals into two - one for 'tonight' and one for the freezer. Doesn't make it seem so bad then..."A simple life freely chosen is a source of strength. Do not be pursuaded into buying what you do not need or cannot afford." Quaker Faith & Practice 1.02.410

Sometimes we buy two veggie side dishes from the Indian takeaway (total £4) and serve over baked potatoes. A lot cheaper than a full takeaway!

This thread could be taken two ways
1. You fancy a takeaway taste and want to save money. The recipes can be used and the money saved be put in a jar.
2. You can't be bothered to cook from scratch and just pick up something or get something delivered. I would have something very quick, easy and filling or pick up something from the supermarket on the way home and heat it up. It isn't as OS but cheaper than a takeaway or eating out.An average day in my life:hello: :mad: :coffee::coffee::coffee::T:rotfl: :rotfl:

My OH now refuses to have takeway curry as the home made stuff is better. I started off using curry queens base sauce, and expanded my recipe collection using http://www.madgeandgeoffrey.co.uk/ who use a similar base sauce. You can freeze the end results so you just have to ping it for really lazy days.'If you have a garden and a library, you have everything you need' Marcus Tullius Cicero0
