    15/1 HM Quorn-a-leekie Pie & veg. (it was yummy even if I do say so myself)
    16/1 Dinner at MIL
    17/1 HM Quorn-a-leekie Pie, peas & sweetcorn
    18/1 Veggie mince pies, HM gravy, mash and broccoli
    19/1 Quorn nuggets, baked beans & crispy potatoes (lazy day as have uni all day)
    20/1 Pesto & veg pasta with grated cheese
    21/1 Dinner at parents

    PS if you are wondering what Quorn-a-leekie pie is, it is the same as (male chicken)-a-leekie pie, but with Quorn chicken style pieces substituted in as I'm veggie. :)
    Enjoy the little things, for one day you may look back and realize they were the big things.

    i'm going to do a freezer inventory later and try to make this weeks meals without buying much. boys are with us thurs-sun

    so far

    tues :hm chicken fried rice (chicken/mushrooms/peppers/spring onions + spices etc) with prawn crackers leftover from takeaway.

    wed: steak with pepper sauce sauted garlic mushrooms with garlic roast potatoes and fried onions.

    thur: scampi & chips with tinned macaroni cheese and frozen peas (not h/m put in freezer so needs using up)
    boys : chicken strips with chips & baby corn


    fri: bulk cook chilli with onions & peppers for the freezer and we will probably have some with tortilla chips & or rice
    boys: chicken burgers in rolls with chips will see if dss2 wants some chilli

    sat: hm spaghetti bolognese (hm bolognese from freezer) with garlic slices in freezer
    boys: will roast the chicken today and give them some for nachos or tacos or will see if dss2 wants spag bol

    sun: roast chicken dinner for us all with roast tatties/ mash/ yorkshire puds/ peas & carrotts & gravy with cranberry sauce


    our lunches will be sausage rolls & beans, rolls in sausage, hm soup X 2, omelette, ham salad rolls.

    we don't eat puddings but have fruit & yogurts when peckish. boys have choc mousse or ice cream.

    the boys are fussy and won't eat what we do -their loss lol! i'm sure they will change their tastes as they get older. dss2 is more adventureous but doesn't like the veg so he would have to pick it out.

    most of this is in freezer/fridge/cupboards so shouldn't cost much

    hiya guys - some great inspiration here. I have just come to the end of my two week meal plan so time to start again before hitting the shops tomorrow. Trying to keep budget tight and use up what's in the cupboards as well as being a little healthy.

    19/1 chilli con carne
    20/1 HM pizza (last attempt was months ago and was a disaster - hoping that this will be better!)
    21/1 making veggie soup (huge pot to do some lunches over the next week and for freezer) [away for dinner]
    22/1 HM pasta and sauce
    23/1 tinned salmon fishcakes (making extra for freezing)
    24/1 chicken tomato based curry and rice
    25/1 meatballs and spaghetti
    26/1 baked salmon, baked potatoes and green veggies
    27/1 sausage yorkies, veg and gravy for dinner

    I've run out of inspiration for the rest of the second week - will leave it just now and come back to it later on (so long as its done before tomorrow its ok!)

  • My week started yesterday, but here's what's on the menu :

    Tue : Fish in batter (Baked salmon for me), h/m vegetable rice.
    Wed : Bolognese.
    Thur : Sausages in red wine sauce (packet sauce we got as a freebie), new potatoes, broccolli, peas.
    Fri : Bacon & leek pasta.
    Sat : Lamb grills in pittas with h/m wedgies & salad.
    Sun : Roast chicken, with roast potatoes, sweet potatoes, parsnips and onions, plus swede/carrot mash, stuffing and gravy.
    Mon : Devilled sausages with whatever we fancy between mash/pasta/rice.

    Desserts are : h/m yoghurt & stewed or fresh fruit; shop-bought yoghurts; ice cream; custard & fresh fruit (banana is a favourite!).

    Breakfasts are : toast, or cereal, or porridge. At the weekends we might have a poached egg, or tomatoes, on toast.

    Lunches are : sandwiches or "something on toast".

    Hmmn .. quite a heavy emphasis on bread, there. ~scratches chin thoughtfully ~
