First for me posting my menu - many thanks for all the great ideas!
Sun - HM smoked haddock fish cakes
Mon - Pasta with HM tomato and pancetta sauce
Wed - Chicken marinated in yogurt and spices with veg rice
Thur - HM pizza, salad, garlic bread
Fri - Mushroom and chicken risotto
Sat - beans on toast or baked potatoes
We usually have 2 or 3 veggies with each meal or a side salad - this week got sugar snap peas, green beans, broccoli, carrots, cabbage, peas and sweetcorn to choose from.
Puds are fruit, yogurt, ice-cream or jelly. Have made banana bread and bought a huge watermelon on special which looks like it'll do a month!0 -
Hi! This weeks's plan is:
Sunday: veggie chilli (made by DH) and apple and damson crisp
Monday: Chicken Supreme (with remains of rubber chicken)
Tuesday: smoked salmon and broccoli quiche, with fresh eggs from our baby hens, who started laying last week
Wednesday: Pasta with bacon, pea and cream sauce
Thursday: chick pea burgers
Friday: spag bol
Queenie's chocolate fridge cookies went down so well last week that I'm making ones with stem ginger. Also a coffee and walnut cake. DD has asked for pizza for her lunch boxes, so will be making individual ham and pineapple ones.

I'm trying to give up pies, dumplings, cheesey sauces, sausages and the like - very difficult when I keep reading what everyone is eating on this board
So, this is a Mediterranean inspired week.
Mon- kids -meatballs and spaghetti in tomato sauce (will make a big batch of sauce)
OH and I - smoked mackerel, salad, baked spuds
Tue- Chickpea and veg stew and couscous
Wed- Chili con carne (yes, I know it's not Med, but lean meat, tomato, sweetcorn, peppers and beans so pretty healthy), rice, avocado salsa
Thur- Grilled fish with lemon, crusty bread, salad (peas+sweetcorn for salad refusers:rolleyes: )
Fri- Veal escalopes (not particularly cheap, but been in the freezer a while) cooked in a tomato sauce Italian style, tagliatelle, broccoli
Sat- Pizza with lots of peppers, tomatoes, mushrooms etc
Ice cream for kids
Sun- Rabbit stifado, lemon and rosemary potatoes, salad
Fruit salad
Weekday puds are fruit, yogurt and honey/brown sugar0 -
Bought some Tortillas so going to make Fajitas with the chicken, haven't done mexican food for ages!
If anyones got a good but not too hot Chilli Con Carne recipe can I please be sent it, PM will be fine, something I have never made beforeOne day I might be more organised...........

TL, do you have a recipe for the veal in tom sauce Italian style please? I have some veal in the freezer, and don't really know what to with it!Save the earth, it's the only planet with chocolate!0 -
Right, this is the first time that I've been organised enough to post my meal plan. DH is away this week for 4 nights, but I have a few single portions of bits and pieces in the freezer. Everything is home made, unless otherwise stated (ie fish and chips which come from the local chippy
).
Sunday - Basque chicken with rice (latest Good Food mag, in their Healthy One Pots freebie)
Monday - Spicy beef stir fry (from latest Good Food mag)
Tuesday - Pasta with tomato/veg sauce (from current Good Housekeeping mag)
Wednesday - Chilli con carne with rice
Thursday - Fish, chips and mushy peas OR baked potato with beans :whistle:
Friday - Quiche (yellow sticker) with salad. We're going out, so need something we can grab with minimal preparation esp as DH gets home late from work.
Saturday - Beef casserole, mash and veggies. (friends coming over, so I need something easy)

Everyone in OS has inspired me to start meal planning - this is my first week (I started last fri).
Haven't done full cupboard/freezer inventory yet but have come in £20 under budget this week so far (til weds) and I will only need milk and bread this week....so thanks guys...just wish I had done this months ago!!!:T
MON Sausage Casserole (SC), Mash,green veg and carrots.
TUES HM Chicken Nuggets, Wedges, Baked Beans (Rice and Peas for DS1).
WED Bacon Pasta Bake
THURS Roast Chicken, Potatoes and Veg
FRI Moroccan Pork with Wraps
SAT HM Pizza (BM), HM Garlic Tear and Share Bread
SUN Roast Pork, Potatoes and Veg.
Also started last week - no more shop bought junk for boys lunchboxes, cakes and biscuits baked!
Lunches for those of us at home will be cheese on toast, jackets, HM soup or sandwiches.0 -

This is my fave one:
Jamie Oliver's Chili con Carne
I use veggie mince instead of beef mince and pinto beans instead of kidney beans. You could leave out the fresh chilli if you want it milder. The sundried tomatoes really add a nice flavour.

I've got some mozzarella in the freezer, so I might put slices of that on top of the veal before adding the tomato sauce.0
