do you eat fake bacon - if so I like boiled spuds (chunks or slices), onions and bacon (obviously for vegetarans you can use fake bacon) in a white sauce.
You can vary it dependent on what you have in, add peas, sweetcorn, mushrooms etc, use an onion sauce, add a smidge of mustar.
My Dad found it many many years ago in the Paupers cookbook by Joacsta Innes.0 -

What we in Ireland call Potato Bread, made using your surplus mash and when made freezes perfectly (after defrosting its fantastic fryed with a full Irish/Ulster/English)
