Masses of potatoes....ideas on how to use?

I have masses of potatoes from the garden! Have made chips, potato curry, potato and leek soup, rostis, baked spuds..... any ideas please? We're veggie so main meal ideas with a potato basis would be much appreciated!

I went on the potato website but there weren't many new ideas that I hadn't already thought of!

    How about a massive cottage pie made with Quorn mince? You could cook a big one (or two) and freeze it in portions.

    Great ideas...thank you. I didn't realise I could actually just freeze the potatoes! Or perhaps freeze them as mash!

    Make a big tray of Dauphinoise potatoes, when cold cut into portions and freeze, hope you got loads of room in the freezer.

    Gratin savoyard: basically it is slices of potato, with salt & pepper + lots of herbs to taste (we use a lot of garlic & grate in nutmeg, some chop in onion) + stock (just realised that bought veggie stock can be highish in salt, so adjust original salt maybe). Cook in a low oven ( it does work in a microwave but I tend to do it when the oven is on).
    You may have come across it already, but the main thing is that it freezes, then accompanies almost anything.

    Potatoe and leek soup which you can freeze in separate portions.
  • The whole point of growing your own potatoes is that they see you through the winter. You can store them without them sprouting until at least January.
    If you haven't got it - please don't flaunt it. TIA.

    I'm not confident in my ability to store them! All my beetroot went rotten last year despite keeping it dry. Or so I thought !
