You have offered me so many ideas! What a fantastic and resourceful community this is!
I am busy this week but as soon as Saturday comes, I shall have a trip down the bottom of the garden, collect a bucket of apples and, armed with a printout of your suggestions, I shall spend the day experimenting in the kitchen.

Ooh, another option is apple sorbet... it's delicious! We had it in a haute cuisine restaurant and made an awesome palate cleanser.
Or, why not make jams and chutneys for gifts? Or sell them?

The house that I grew up in as a kid had 2 cooking apple trees, one was a Bramley, forget what the other was.
Every autumn we would pick them and they were wrapped in a bit of newspaper each and stored in the shed to stay cool. This was in the 60's when we didn't have a freezer or anything fancy to preserve them - I seem to recall they kept until after Christmas fine.
Mum made the usual stuff with them - apple crumble, baked apples, apple & blackberry pie, you name it.
You could probably also make cider/wine out of them, we never tried that, only made wine from crabapples.For every complex problem there is an answer that is clear, simple and wrong.0 -
You could make chutneys and mincemeat for Christmas? My boss gives me loads of cooking apples from her garden and I use them for this every year.0

When to pick will depend on where you live but I find end of September is best here.
There's an earlier thread with more suggestions on using bramley apples so I've added your thread to it to keep the replies together.
