What to do with cooking apples?

    Think Ill be making my surplus apples into Sauce and then freezing in portions - save me making some in a couple of weeks any way

    Hello Everyone! I was wondering if any of you had any suggestions as what to do with cooking apples. We have a huge tree in the garden that produces masses and masses of those apples (not sure as to the exact variety). I have only used them once, in an apple crumble -It was good, but my hubby and I only VERY rarely eat cakes and generally don't like sweet stuff (so jams etc are out of the question). I was wondering, is there I way I could roast them, grill them or otherwise process them without transforming them into a cake/jam or sweet sauce? My neighbours have the very same type of apple trees in their garden (I guess they were all planted at the same time when this row of houses was built) so it's not easy to just give my apples away.... seems such a shame though. We got buckets of apples and they go straight in the compost bin. Makes my money-saving heart bleed...... :confused:

    Damm why can you live closer to me... I would use them :)

    How about apple and ginger soup?? I have made it before and its nice and totally freezable. You can also have squash & apple soup and parsnip & apple soup. You can core bramley apples and stuff with camembert and walnuts for a diffrent posh starter but not freezable.

    Appart from that all my ideas seem to revolve around apple sauces or stuffings for pork. Or of course Jams

    savoury chutneys they add a touch of sweetness and texture? lightly cooked and mixed in with cous cous or a salad?

    Apples go nice with pork. Pork/apple pasties, pork/apple pies.

    Apple puree/sauce. Peel, core and stew gently with sugar to taste. Puree in a food processor or rub through a sieve. Freeze in usable amounts. Great with yogurt for breakfast or with pork.

    Chutney is another idea. Or, even if you don't like jellies you could make some for gifts. Herb jellies are a good idea for apples. You make a basic jelly out of the apples and add chopped herb -rosemary, thyme, mint are good. These are great brushed onto meat before cooking. Or what about chilli jelly? That uses apple as the base because they are high in pectin.

    Apple sauce as we make it is apple cut off the cores and either shoved in the oven until soft or stewed on the top of the stove with the smallest dash of water to stop the pan burning and then mashed up or blended. No sugar, freezes well and gets eaten as a vegetable.

    • Baked Appples stuffed with dried fruit and brown sugar and a little mixed spice or cloves are lovely.
    • Apple Scone ...just make a scone recipe up and add grated apples, form into a circle, mark into wedges and bake, great for lunch boxes during the week.
    • Apple sponge is easy - stew some apples put into a dish, cover with sponge mix, sprinkle with flaked almonds and bake.
    • Make your own cider
    • Or just freeze them

    dried apples, I love them from health food shops and it always costs so much!
