    Yes, you can add lemon juice to any cut fruit or vegetable to prevent it from browning (it's the vitamin C a powerful antioxidant). I use it also on cut artichokes. Just squeeze some lemon in a bowl of water and put the artichokes inside just after cutting each and before cooking.

    When I juiced a lot I found that juicing a slice of orange or lemon first, then putting the apple through used to help, but I think the action of juicing is always going to result in a bit of browning because of the process.

    I've had no problems making fruit salad in advance either.
    My first reply was witty and intellectual but I lost it so you got this one instead :D

    Thanks, wll give that a try, it tastes great but the kids say it looks like runny poop! Charming little darlings.

    I suspect that lemon juice will have limited, or no, affect on apple juice. Fruit acid stops cut fruit from browning as it inhibits oxidisation. The browning of apple and grape juice is a pectin haze. Can be rectified with pectolytic enzyme which is used in wine making and commercial fruit juicing to clarify the juice. 1 teaspoon to a gallon (2gms to 4.5 litres) and let stand 2 hours. You then have to syphon the clear juice off the precipitated haze. Costs about £1.20 for 100gms from Brewing suppliers, but not really worth the bother for juices in the home environment.
