    It sounds like something my mother made which was called eggs a la mornay ie eggs with cheese sauce.
    OOh Eggs Mornay, I haven't had that for years. Hard boiled eggs cut in half lengthways, covered in cheese sauce and topped with breadcrumbs or, my favourite, crushed up crisps. :D

    Will try this - gets the three ticks, sounds deicious, quick and the magical word - economic!

    sounds related to what we used to call 'colcannon', although now I look that up on the internet it turns out it's quite different from proper Irish colcannon! ;)

    We used to mash up potato and cabbage (or whatever leftovers there were), then bake in an oblong dish with a couple of eggs as you describe, with cheese or nuts if we had any sprinkled on top. Lots of pepper and nutmeg to flavour it and yes, cheese sauce with it if possible.

    Haven't made it for ages - thanks for reminding me about it, will make sure I cook some when autumn comes in!

    I use mashed potato, cabbage and chopped up spring onions, makes alot but cuts the calories as the cabbage bulks it out!

    A bit like that yes - but not as decorative lol. Mother just used ordinary mashed spuds as well, but yes that is the idea.

    I have this recipe in an old book that was compiled by some people who worked for BT and which was sold in aid of the African Famine Relief fund in 1985. (some things don't change). They called the recipe Baked Eggs and its exactly as you describe.
    Mortgage and Debt free but need to increase savings pot. :think:

    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)

    similar to this sort of thing, my mum use to cook up something in the oven which was cheese, rings of onion with egg somehow, in a pyrex dish, it might have had mushroom in it, like a big portabello one, but im not sure. she cant remember cooking this thing let alone how she did it. im not sure i have the ingredients right but i know there was egg for sure, cheese and onion, the egg was baked
