Does anyone know what this dish is called?

Growing up in the seventies my mother used to serve this dish once a week.

It was mashed potato put into a round pyrex bowl and she made little wells into which she put eggs in. It was topped with sliced tomato and baked in the oven. It would be served with cheese sauce.

Any ideas what this is called anyone please?

    It sounds like something my mother made which was called eggs a la mornay ie eggs with cheese sauce.

    It sounds wholesome and comforting....

    I think im gonna try with the kids come a cold winters evening, when the come home from school!!

    It is yummy MOF, you can also make individual portions in those little oval pie dishes.

    Sounds like a 'use up' of Sunday lunch mashed potato, magicked up into a meal (good idea) cos eggs is cheap.
    make the most of it, we are only here for the weekend.

  • sounds related to what we used to call 'colcannon', although now I look that up on the internet it turns out it's quite different from proper Irish colcannon! ;)

    We used to mash up potato and cabbage (or whatever leftovers there were), then bake in an oblong dish with a couple of eggs as you describe, with cheese or nuts if we had any sprinkled on top. Lots of pepper and nutmeg to flavour it and yes, cheese sauce with it if possible.

    Haven't made it for ages - thanks for reminding me about it, will make sure I cook some when autumn comes in!

    Thanks nutmeg, i did wonder whether there was some sort of Irish roots to it since my Grandad was Irish. Wasn't sure whether it was just a throw together either. :)

    I wouldn't suggest it if the weather is hot as it's quite heavy. Lovely for Autumn and Winter months though.

    I was trying to think of recipes for colder nights.

    We used to call this eggs in nests.
    Mum used to do eggs mornay as well but that didn't have any mashed motato involved in the dish itself
