    hi Maitane,

    Rougaille is a traditional Mauritian dish(where my family is from) you start with onions, ginger, garlic and chillis (dried is fine) frying in a little oil, then add tomatoes and thyme and a few curry leaves if you can get them, salt and pepper to taste- that's the basic reciepe and everyone has their own family variation on what they add to it.

    The sauce can be served just like that, but more often fish, chicken, or pulses are cooked with it- goes well with butter beans!

    I will be doing it on it's own ( my Dad - who was the chef in our house- used to call it "Rougaille touni" as a joke- trans= naked rougaille) as I wanted to have a veggie day this week...

    I know I'm really lucky with the goodies from Mum- she's finding her feet cooking-wise after 30yrs of not doing anything more than making toast so likes the chance to cook for other people- also think it's her way of getting things back to normal Dad was forever cooking and packing up things for us to take with us...off topic now sorry!

    anyway that's rougaille in a nutshell! if I put up things that don't make sense/people would like to know anything about etc please feel free to ask, am more than happy to explain/share recipes etc I am foodie at heart!:D
