You'll get a better deal using pesos as you won't be at the mercy of the shops exchange rate.
For the exit tax you have to use pesos, euros or pounds (no USD).
I went to Mexico in June and we took a mix of Pesos and US Dollars but we ended up exchanging our USD for pesos as this is more appreciated by the locals.

By the way, mexican pesos prices are also labelled $ just to confuse the matter!
