Ludicrous fare increases on "Cheap" Flights

I booked 2 return flights to Malta through a well known site. Total cost around £375. Due to a change in personal circunmstances we wanted to move the flight back 2 days. The flights were not until end October.
Same airline same time, flight 2 days on. I was quoted an extra £206 ; about half for "Upgraded" tickets ie the price had gone up and the rest for changing the tickets.
When I asked if I could abort the whole transcation I was told that I would lose the £375 because there was a "no refunds" clause in the small print.
So reluctantly agreed to pay. However, within 10 minutes they came back to say that the additional cost would be £779 each i.e. £1558 or a total flight cost of over £1900! Enough for 3 people to fly to Australia and back.
Is there nothing to stop such ludicrous practices?

What is the cost of a completely new booking ? it may be cheaper.
If you wanted flexibility you could have bought a flexible ticket but of course that would have cost you much more in the first place.0
