    Using 1 to make a mousakka but using courgette/marrow/whatever it is now instead of aubergine.
    Found a marrow chutney recipe so theres another gone
    Now what to do with the rest?

    Hey thats what I did too - love mousaka but you can change your recipes to suit what you have, thats whats great about growing your own - you find ways to serve up meals with a difference!

    :rotfl:we had stuffed marrow the other day, my hubby wasn't impressed - too much veg, even though he had about 300g of minced beef served with it

  • I stick courgettes in all sorts of stuff.
    my favourite dish is a med fish dish i created by taste when pregnant from memorys of fish dishes in corfu/ tunisia etc.
    basically getting a big tray lightly frying courgette slices and aurbergine, onion slices in olive oil and lots of grated pepper and oregano.
    i then layer in some sliced pepper, maybe potato, and some whole chillis and pop cherry tomatoes in.
    i make a tomato sauce with passata and again oregano in it, some chilli flakes, cumin. pour sauce over the veg in a huge square tray, add some lemon slices or juice. adding more herbs spice if needed.
    when its cooked i then just add some white fish on the top, sprinkle with lemon juice olive oil, more oregano!! and salt and pepper and then serve up with warm crusty bread.
    not sure if the dish has a name..i call it the fish dish if oh asks:rotfl:

    we LOVE stuffed marrow. I stuff mine with lamb, rice and dried fruits usually, lots of morrocan spices..cinnamon etc. Last week we used millet instead of rice and that was delicious too.

    I made stuffed cougettes with Quorn mince, onions , tomatoes and the inside of the courgettes. After adding the ingredients with herbs to a pan for 20mins I then stuff the cougettes and cover with breadcrumbs and cheese and put in the oven gas mark 6 till the courgette is cooked. Yummy either on their own or with rice/ couscous.

    Can you freeze a few stuffed courgettes for quick "ready meals"? Make courgette soup, it's delicious and will keep a few days in the fridge or could be frozen http://www.bbc.co.uk/food/recipes/italianstylezucchini_9833 is a very tasty recipe and fine without the cheese.
    Courgette pasta?? Ribbons of grilled courgette with pasta and pesto.
