How do I bake a cake in my breadmaker?

I made some carrot cake in my BM - recipe came with the machine.

The cake did not rise at all. Is it normal?

My BM is 1kg capacity, when I put all ingredients in, it only took about 6cm (2.5 inches) depth.

Does anyone know if carrot cakes rise at all?

    Any chance of letting some of us try your recipe? I don't mind being a 'tester'! I have not tried a cake yet, though I believe my BM has a program for it.

    here we go...
    Use Quick Setting

    Vegitable oil 100ml
    Eggs 2
    Soft brown sugar 175g (used white sugar)
    Grated carrots 200g
    Walnuts, chopped 50g
    Sultanas 100g (used Sainsbury’s value mixed fruit)
    Ground nutmeg ½ tsp (put mixed spices for cakes)
    Ground cinnamon 1tsp (put mixed spices for cakes)
    Wholemeal self raising flour 220g

    It came out quite tasty, but I wish it was a bit more of it :rolleyes:

    Well, that was a disaster! I checked out my other recipes for CC and the one you gave looks similar, but it is as if there is some vital ingredient missing! It is like a huge carrot cake soft cookie! Tastes nice, but I don't think I will repeat the experience. I wonder if anyone else will stop by and give us some advice........

    Hi Soscrooge and Wizzkid, sorry to hear about the carrot cake disaster! I am no expert but in my BM manual it tells you to mix all cake ingredients outside the bm and just use the machine for the baking bit - could that be it? Apart from that the recipe looks very good. HTH

    I did change things a little bit, I mixed in the bm until it was all mixed up and then put it on to bake as I wondered if the other programs mixed it too much or let it sit for too long before cooking so that the air 'went off'.

    I have an idea. I will try adding some (1/2 tsp) of baking soda with a drop of vinigar. My sis suggested it should fluff things up a bit. She also mentioned that I can put lemon juce instead of vinigar.

    Another attempt... separated the eggs and beat the whites up. Also put 1/2tsp of baking soda with a few drops of rasberry vinegar to disolve it.

    Mixed all separatly and used BM only to bake.

    It started rising, and I saw some pops of air in the mixture. But... I left it in the tin overnight, and in the moring it was all flat again. :rolleyes:

    But it tastes better - more moist.

    Next I will try to increase soda and vinegar to 1tsp and see what happens.

    Maybe the mixture is too heavy to be lifted up? To much carrots or raisins? :confused:

    Dont know if this will help, as my BM doesnt have a recipe for carrot cake, but does for standard cake and fruit cake.
    It says to mix the wet ingredients together (both types of cake have 2 tsps of lemon juice), then mix the dried ingredients (again, both use 2 tsp of baking powder), then combine both before pouring into the BM. Maybe trying this, and the lemon juice and baking powder might help your carrot cake to rise!!!!
