    No offence but why do some meat eaters insist on having meat in everything??? You can have veggies cooked without dead cow juice.. really... try it.. some vegetables are *gasp* tasty on their own!

    Roasted veggies are gorgeous... carrots, peppers, spuds, parsnips, squash, sweet potato, onions, aubergine, courgette .. etc etc.. bit of good olive oil, salt and pepper, few herbs maybe. Yum! (actually one of my fave meals is yorkshire puds with roasted veggies n gravy :)

    Oh I know veggies are tasty on their own - we never have meat as a main meal here because we eat the same thing. If I ever have meat myself it's only a reduced for quick sale pie for my lunch, or the occasional slice of ham if offered it. I understand my sil is cooking me a M&S turkey portion for 25th, but that is once a year.

    My query was with roasting as a method of cooking the vegetables, but someone further up this thread has cleared that one up for me, and I now don't doubt that they do not get dried out. I've always been a boiler myself (and you can take that one any way you like, lol :D ).
    :D I haven't bogged off yet, and I ain't no babe :D

    Slice some root veggies really thinly, spritz with a tiny bit of olive oil, roast in oven at 150 degrees for about half an hour and you have veggie crisps. Beetroot is fantastic. This was a Gillian McKeith suggestion for snacking.
    If you want to try a few before you give this a go, you can buy ready made ones in Tesco - expensive though!
    I have plenty of willpower - it's won't power I need.
