    if you like sweet flavours then roasting veg is ideal - and do it in a very hot oven with just enough oil to coat them (pop everything in a bowl and give it a good toss beforehand) turn them occasionally and cook for about 40 minutes - sweet potato is lovely and very good for you - make it like potato wedges 9skin removed) and add rosemary (dried is fine) for a great flavour.

    and bogof veggies don't dry out as the sugars are released in the cooking so you get a lovely crispy sweetness to the edges if they're looking too dry then just add a little more oil but not too much or they go greasy (I usually throw them back in the bowl and toss again before returning them to the oven)

    best roasting veggies are any root veg (a mix of carrots, swede, parsnip, sweet potato or squash works well) and add quartered onions, whole cloves of garlic and pop a chopped courgette in towards the end...
  • Few things to try. Boil/steam carrots and toss in a little brown sugar - yum!
    Rub your cut parsinps in honey and wholegrain mustard then roast - yum yum!
    Like mashed potatoes? Chuck in some cooked swede before mashing...2 veggies in one go and quite a sweet taste.
    Chuck some cooked broccoli and leek in a dish sprinkle over some grated cheese and grill.
    A chrissmassy one. Boil sprouts and add some cooke bacon pieces

    my god.You lot could sell fridges to eskimos. I will try---if you can fryit then I might eatit... I am a granny so doubt very much I will grow to like the wee sods now. :) I don't know the difference between swedes and turnips --we just call them turnips. But done with haggis and pepper , I like them. Thanks all so much for this.
    But the great dane will have to go in the shed .He might chew the hoover.
    Or you might, after a week of my cooking....

    Lol, well if you are a granny then your diet can't be all that bad!

    The trouble with made-up usernames is they can give entirely the wrong impression. I had you down as a young bloke with his first bachelor pad :o :rotfl: .

    Sorry am not really one for sweet things but here are a couple of suggestions:

    Have you ever tried cooking cabbage with caraway seeds. Caraway tastes like licorice. My OH doesn't really like veg and he says he can't believe its cabbage! I shred the cabbage, put in a frying pan with a lid and add some boiling water (only about a centimeter high into the pan). Sprinkle on the fennel seeds and then put on the lid. Boil for ten minutes.

    Other ideas to try if you like crispy, cheesy toppings is to make a cheese sauce and pour over lightly cooked broccolli and cauliflower (you can also add leeks). Sprinkle with breadcrumbs and cheese and bake in the oven.

    Carrots, boiled and drained. Toss in honey and sesame seeds.

    Grated carrots and parsnips, cooked as for the cabbage in a frying pan, but instead of water, use white wine and sugar.

    Roasted summer veg (red onions, peppers, aubergines, whole cherry tomatoes, courgettes, etc) cut into approx 1 in square pieces tossed in olive oil and rosemary and into a baking tray. Turn over once during cooking - needs only about 20 minutes max. As mentioned, the roasting makes the veg nice and sweet.

    Green Beans with Garlic and Lemon

    I use margarine instead of butter as we are vegan. I also don't bother with the parsley at the end. I like to slice the beans lengthwise after blanching and cooling.

    Here is a nice recipe for beetroot:

    Balsamic-Glazed Beets

    Asparagus is lovely roasted with a bit of olive oil and salt. Red pepper, onions and carrots are also very nice roasted.

    Greek salad is another favourite. Chunks of cucumber, red pepper (I peel them as I don't like the tough skin), red onion and tomatoes (sometimes we also add avocado or marinated artichoke hearts). Dressing made with 1/2 teaspoon dried oregano in 1 tablespoon olive oil (let it sit while you prepare the veggies). Add salt to taste, then top with olives and cheese (traditionally feta, but we use Cheezly).

    I could go on (we eat around 8-10 servings of fruit and veg each per day), but there's a few to get you started!

    THis is making me hungrey i love veg, im going to do the maple syrup parsnip recipe for christmas, also nigella does her sprouts fried with bacon sounds yummy

    well, it's an eye-opener. I don't suppose I will suddenly start loving veg, but at least I can force some down now.
    Yes , the way I eat its a wonder I ever got to grannyhood:). And lol Babe --a young guy in his first batchelor pad knows and CARES a lot more about cooking than I do !! The best thing that ever happened to me was discovering an american penpal who told me about CROCKPOTS. hallelujah !

    Great way to cook cabbage:

    Chop a couple of tomatoes into chunks, put into saucepan. Add a knob of butter. Turn on heat.
    When toms and butter have melted in together add shredded cabbage. After a couple of minutes stir contents of saucepan together. Cook for another 4 -6 minutes.
    No water needed !

    No offence but why do some meat eaters insist on having meat in everything??? You can have veggies cooked without dead cow juice.. really... try it.. some vegetables are *gasp* tasty on their own!

    Roasted veggies are gorgeous... carrots, peppers, spuds, parsnips, squash, sweet potato, onions, aubergine, courgette .. etc etc.. bit of good olive oil, salt and pepper, few herbs maybe. Yum! (actually one of my fave meals is yorkshire puds with roasted veggies n gravy :)
